Ad Hoc's Fried Chicken

I'm desperate to make Ad Hoc's fried chicken, but have a question re: the brine. I only buy kosher chickens and if I make this with an Empire bird - my preferred beast - without adapting the brine I KNOW it will be inedibly salty. If anyone has any suggestions they'd be much appreciated!
