I want to get more into Sushi/Sashimi. I have tried about a dozen different types of raw fish and my favorites so far are White Tuna, Red Snapper, Fatty Tuna and Young Yellowtail, or Hamachi. White Tuna and Red Snapper are less fishy than most with very clean flavors but not so tender. The Fatty Tuna, or Toro, melts in your mouth - it's tender, succulent and buttery. Young Yellowtail, or Hamachi, is complex with tons of flavor and everything you would expect from raw fish.
What are your favorites and WHY? Describe using English names please for the newbies since I'm sure many of us have no clue what Maguro or Unagi are :)
