Does anyone know what is pictured on the cover of the Thomas Keller book "Under Pressure"? I get that it's something in a vacuum sealed bag, but what is it!

I just got this book for my boyfriend (along with the Sous Vide Supreme) for Christmas and we were wondering last night what that photo is.
