My First Christmas - Mexican Recipes?

Well, in order to celebrate the fact that I have finally moved out and into my own home, and since it's only my parents and myself for Christmas, and since we just had the big turkey dinner for Thanksgiving and my father and I aren't big on having another go at that, I have offered to host my parents at my new home for Christmas dinner on Friday.

So, I have decided that to be different (we are MN/ND people used to eating plain food - although my father and both love spicy food) I wanted to try something totally different and go for fajitas, which are already set. However, I was hoping that people might have interesting ideas for spices for the meat, what types of meat (no fish - my father is deathly allergic), sides, desserts, anything else that you might think would go really well with just traditional plain fajitas (bell peppers, onions, tomatoes, you know).

Does any have ideas for any of that or ways to make it *just* a little special, without making my mother gag on the spices, or my father not eat (he also refuses to eat rice - sorry, another problem). Anything would be great! Thanks in advance!
