Donating a Holiday meal for 40 - need advice!
My mom and I are donating an entire Holiday meal to families at the local Ronald McDonald House this Christmas. We want to go with a New Orleans theme: simple salad, Jambalaya, a corn side dish and chocolate bread pudding. I've googled tons of recipes, but can anyone help find ones that will work well for a crowd?
We're buying all the food but their kitchen is bare-bones (i.e. we don't have resources to put a pudding in a water bath). Please let me know if you have suggestions of recipes or tactics that will help us give these families a great meal.
This includes tactics for changing a "serves 6-8" recipe into "serves 40" without losing the quality they deserve. Help?
