Winter squash and pumpkins

I have been blessed with an abundance of winter squash and sugar pumpkins.

Make Ina Garten's Roasted Squash Salad...do it, you'll love it!

I'm actually making winter squash soup today! I normally use butternut but they didn't have any at a grocery store last night, so I grabbed a "golden nugget". I've never used it so it's an experiment :-)

I like my very simple pottage- saute onions with butter and salt, add cubed squash and potatoes (the amount should be less than squash- just a thickener) and concentrated chicken broth (like Campbell's or homemade stock reduced to 1/2 vol) and cook until softened, then puree in the pot, add milk (the reason I use concentrated broth is milk dilutes umami), heat until hot, serve. It's so versatile and you can change the flavors with spices/herbs!

I have two favorite winter squash soup recipes. One is from Chic Simple Cooking, and is flavored with rosemary, orange peel, and pears. It's a quintessential fall/Thanksgiving soup. The other is from The Vegetarian Table: North Africa. It's a spicy soup that is finished with chickpeas so it just seems extra healthy and delicious.

I have two soup recipes as well. Gingery Butternut Squash Soup is very unqiue.

Butternut Harvest Stew is a traditional favorite.

i tried to buy a pumpkin today at the store. want to try to make a pumpkin pie, all from scratch, but they were out. is the season over?

I've made butternut squash soup by roasting cut up pieces along with an apple, then cooking it in well-seasoned vegetable broth and then puree. What makes it special, is i use a cup of apple cider for part of the cooking liquid.

I make pumpkin muffins using a good recipe for pumpkin bread. These freeze well and I put a frozen one in a baggie in my husband's lunch box. By noon it's defrosted and ready to eat. You can use any winter squash or even sweet potato in place of pumpkin.

Just thought of another recipe: Three Sisters Stew with winter squash. I've been a bit obsessed, with the "Three Sisters" this fall and my first stew was with corn and summer squash. The winter squash version is right up your alley! I might substitute hominy for the corn just for kicks though.
