Tell me if this cake idea sounds good.
I'm still waffling over the dessert for t-day. A few weeks ago, I made some pumpkin cookies and put peanut butter chips in them, and they were really, really good. DH is still talking about what an unusual and great combo it was.
But we're not having cookies for dessert.
So I was thinking maybe a pumpkin cake roll with a fluffy creamy light peanut butter filling. But every time I think about it, I think that adding a white chocolate maple ganache drizzle or frosting...or a maple cream cheese frosting -- would be the perfect finish for the cake.
I'm thinking that none of the flavors would be an in-your-face sort of thing, They'd all be fairly subtle.
I don't have recipes for any of these things, so I'd be winging it for the filling and frosting, at least. I'm sure I can come up with a cake recipe that will work, though.
Whaddaya think? Have I gone mad?
I'm also thinking that the filling could be a whipped cream sort of thing, and then freeze the cake and serve it mostly frozen so the inside is like a fluffy ice cream.
