Potatos in the refrigerator crisper drawer.

I always refrigerate potatos; live in So. California. Randomly, there occurs a sweetening process which turns a small part of the natural starch into sugar. Once read about this chemistry in one of the cooking mags. Have never experimented myself.

The variables would be: Time, Temp, Variety of potato
Anyone have info about this?
