I stopped watching the Food Network for quire a while, but happened to catch an episode of the Barefoot Contessa about a month ago where she made her version of parmesan chicken for Mel Brooks. I told my boyfriend that this recipe changed my life. That's really dramatic, but seriously this is the perfect recipe and it always makes me so happy to cook it and eat it and when I serve it to other people I say, "This will change your life." They think I'm crazy and it doesn't change their life, but they do contend that it's seriously delicious.
The recipe is really simple and straightforward, it's basically just parmesan chicken with a really crisp salad directly on top that's been tossed with a tart lemon vinaigrette. Afterwards, you just shave shards of parm on top. It's fresh and easy and hot and cold and tart and savory; I think it's the greatest thing in the world.
