What's up for dinner tonight? Sunday 10/11.

Hey guys. It's been a perfect fall day here. Sunny and in the 50s, pretty darn good for Syracuse--we're used to a lot of grey skies here. After planting 60+ tulip bulbs and other yard work today, I'm looking forward to dinner tonight. Firin' up the grill for Dijon and thyme rubbed sirloin for the guys, grilled haddock for me and smashed, garlicky red potatoes and brussel sprouts to round out the meal. What's up with your dinner? And for that matter, how's the weather where you are and does that affect what your dinner plans are often?

Sausage and peppers on a homemade Italian roll ,a Sam Adams Octoberfest brewski and football!

My roommate is taking charge of the kitchen tonight, and is making black beans cooked in beer, braised collard greens, and something involving a cassava. Yum!

We just got back from an out of town wedding. After eight hours of driving yesterday and six today, we are in need of some serious comfort food, so I'm trying out Martha's macaroni and cheese recipe, which I'll serve with a little spinach and basil salad on the side.

We have tons of CSA produce that needs to be used! Hence dinner tonight is a vegetable lasagna incorporating onions and red bell peppers, collard greens, and roasted butternut squash, with roasted pumpkin pureed into some ricotta, PLUS a bit of tomato sauce since Mr Food Issues always prefers his pasta dishes with tomato sauce. I made it up & it's in the oven now so I can only hope it will be tasty and not a disaster!

I ate in the dining hall tonight--sundaes on Sunday--can't miss that! Last night I posted that I made the pumpkin chili and that I loved it. Well, I was the only one. BigMan, who eats everything except lima beans, skeeved it and the 13 year old bottomless pit thought it was grotesque. BabyGirl said, "Oh mom, it's just not my favorite." Oh well, more for me.

As for the weather affecting meal planning--some days in New England just beg for stews, soups and chilis. But for me, more importantly, I get the wickedest cravings and must have that particular thing or else.

Had company over, so I made a bunch of things from Ida Garten's Back to Basics cookbook:

the Herb-Marinated & Grilled Pork Loin
the Buttermilk Cheddar biscuits
Cape Cod salad

and homemade applesauce, butternut squash (mashed w/butter and maple syrup), & brownies.

I meant Ina, not Ida. Must've had apples on the brain!

Dinner tonight was spaghetti with meatballs. I'm not a big fan of meatballs, preferring the meat dispersed throughout.

I did a dry rub on some baby backs and fired up the grill. Mac & cheese and some roasted vegies. I'm in the Atlanta area where it was sunny for most of the day. but I usually just cook what hubby or I feel like despite the weather.


rainy all day here. fresh ricotta-filled ravioli (bought from local maker) with fresh oregano, sundried tomatoes, zucchini. maybe a side salad?

I made pork chops, sauteed spinach, corn and applesauce..for dessert, I made 2 pumpkin cream cheese loaves with pecans...one loaf is gone already....was soooo moist and yummy!

I am craving all things pumpkin and may make what PoorOldMama made, the pumpkin turkey chili at some point this week.....

BTW: The weather was sunny and 60's

Baghare Baingan...eggplants in a tangy, cashew coconut sauce. I often make things that are seasonaly inappropriate just because I feel like eating them - like I'll jack up the oven and roast veggies in the middle of the summer. But I cannot make chili in the dead of summer...that seems like a no no to me.

then delicious mashed potatoes, peas and meatloaf!
..can't get enough meatloaf these days, the cold weather is definitely here

semi-homemade pizza, with red peppers and spinach atop. weather-changin' cheesy goodness.

bunches of random leftovers from the previous week to clean out the fridge.. and made chicken and dumplings and meatballs for this week, and have a loaf of cinnamon raisin bread proofing.

Burgers, with fresh ground chuck. Some oven roasted potatoes on the side. Simple yet delicious

Tonight was our Canadian Thanksgiving dinner, so... Cornish game hen with challah bread stuffing, mashed 'taters, ginger cranberry sauce, roasted butternut squash soup, and gravy. Now we're in a serious food coma, haha!

We had the most refreshing walk today in the country and again how lucky we were to live in the rolling hills of Chester Co. (west of Philadelphia). I think we were close to 70 degrees.

Again, I thought I would grill to get some deck time. Our meal was grilled asparagus with a roasted tomato and balsamic vinaigrette, grilled potatoes with old bay seasoning and some lovely delmonico steaks with a little spicy rub. We topped it off with gingerbread cake and freshly whipped cream.

Life is good!

Work tonight, and the cooks are getting DULL in employee dinners. I've worked 5 nights in the past 2 weeks, and eaten nabe 4 times. And not very good, at that!

I'm going to have to supplement with Burgerville sweet potato fries on my way home. ;)

After a long day of doing dishes, putzing around the house, and finally doing a little shopping in the afternoon while my bf recovered from a wicked but thankfully RARE hangover, I turned to what has become the most recycled meal in my kitchen: baked pasta. I did a mashup of the SE one-pot baked ziti recipe with a few notes from a "the kitchn" fast weeknight recipe contender, adding sausage to the dish and a little cinnamon to the sauce (so good!), and using whole grain rotini. It never turns out the same twice, but last night's go was especially good.

Canadian Thanksgiving dinner so we had turkey for lunch which I made and then leftover turkey at a friend's house for a late supper.
