What's for dinner tonight? 10/7

I got some great looking lamb chops at the market this morning, and am thinking about making my favorite lamb recipe!

A recipe from "Cuisine" magazine - fresh cheese tortellini with cubed butternut squash and prosciutto in a sage-wine sauce thing.

For dessert, sliced melon.

Dining hall. Too much football, running club but hold on off for tomorrow. It is going to be a big day!!

I'm having roasted butternut squash, homemade rosemary/parmesan cornbread, and garlic mashed potatoes with a ground turkey gravy. I'm really into eating just sides now; they're usually the best part of the meal. Not only that, but I'm not a big meat fan and it's too expensive anyways.

So, in an effort to cheaply use up a ton of leftover lamb curry and basmati rice from a cooking competition on Sunday, I'm making lamb curry rice 'ravioli'/'dumplings'.

I'm using Mario Batali's potato ravioli dough recipe and subbing in lightly pureed basmati rice. Thinking of serving it with some garlic greens, maybe a bit of browned butter (just to try to bring in something besides simply "Indian" flavors).

We shall see...

Mmm! Tonight I had baked spaghetti squash with yellow squash on top... along with some roasted brussels sprouts (with garlic & lots of olive oil), spinach & a turkey burger with cilantro mixed in - GOOD STUFF! My tummy is definitely happy right now!

Chicken cacciatore over orrichete (sp?). It was oooooh so good, the hubby had three bowls!
