What's for dinner tonight?-10/02
I will be flying all day today for a cruise tomorrow and won't be able to keep up for a few days but I thought I 'd cap off the week with a "what's for dinner" thread as I enjoy them so....Dinner last night-leftovers. Braised chicken & veggies, salad with beets, walnuts, cranberries and goat cheese and followed by a nice cup of jasmine tea to calm me as I finished up a "last-minute-throw-every- pair- of- shoe- I- have- into-the- suitcase" frenzy... Anyway....I will check back from time to time over the next few days to catch up.....Take care, everybody :o)..Happy Eating!

I'm actually making tomorrow's dinner right now-- at 1:30 a.m. I go back and forth between cooking and writing and cooking in the middle of the night has become my new favorite thing. Anyhow, tomorrow's dinner will seem like Food Network exploded allover the place. I'm making Tyler Florence's "Italian" take on chicken noodle soup; it's done with chicken meatballs and cheese tortellini. I'm also making Ina Garten's parmesan thyme crackers, which are incredibly delicious and a slight pain in the ass to make, but worth it.

Friday night is pizza night in the Horst household. I'm thinking about maybe making one of the pies Sicilian style just to change it up a bit. My younger son has been requesting a thin, cracker like crust with olive oil, garlic, onions, very little cheese and a generous sprinkling of coarse sea salt on the crust, older son is really into Frank's Red Hot for the sauce with extra cheese and pepperoni, and the husband is more traditional with tomato sauce and generally pepperoni, mushrooms and onions. I generally like just a good old margherita style pie, but lately I've been getting tired of pizza--OMG don't tell the family I said that, they'll string me up by my toes for that. I'm hoping that maybe a different style of crust will be enough to break me out of this pizza boredom rut.

you have a great time @italiancupcake! sounds like you're going to be doing some serious grazing on a cruise....... @dhorst - how can you get tired of pizza? maybe your hands from working the dough.... maybe put it in a big sheet pan and make a strip of different toppings on one pizza!
as for me, tonite? i can't really say, i have so much prep to do for the farmer's market..... i may have to feed the gang leftover potato dill soup.... we'll see.....

It's a little early in the day to know for sure, but probably sole meuniere with a eggplant as a side - we got sole from our fish share and I'm really looking forward to making meuniere with it, as opposed to whiting which is what we got in last week's share. Fortunately, my husband liked the whiting meuniere so much (it was really excellent - delicate and flavorful), that he requested it again. Might as well perfect meuniere now and commit it to memory since we both loved it.
Interesting story about our fish share: When the fisherman went to fill our bag from the cooler of whiting, he held up not one, but two pairs of whiting, in which one was trying to swallow the other head first and they were stuck that way. He said, "Yeah, one thing about whiting is that they're cannibalistic." This caused quite a crowd at the market - everyone wanted to see. He said they're fine and to just pull them apart and clean as usual. I let hubs clean those guys. [cringe] There's no way one could actually eat the other, their little organ cavity is the size of a grape, not like a snake. But still. Yuck.

For my dinner tonight, I don't know. I've successfully used up most of the ingredients in the fridge for lunches and dinners this week, so I might go out to eat...it's been a long week. Otherwise I might make lamp chops with a huge salad.

I'm going the dhorst route tonight and making homemade pizza. Pepperoni & Mushroom for the 3 yr old, Sausage for hubby and Pesto and Oven Dried Tomato for me!

Tonight is my triumphant return to eating solid foods! Yes! I am sick of soup and pudding. (On a side note, I never knew that leeks were a diuretic until my recent foray into brewing vichyssoise led to a sleepless night of belly-achin'. Vegetables are powerful.)
Um, so tonight will be some kind of feast. I would really like to braise short ribs, but I'm not sure if there will be time. I suppose I could make some kind of appetizer/snack thing when I get home to tide us over while the meat's a-cookin. Then have late-night short ribs with squash and something green!

@semarr Congrats, that is great news. @italiancpcake I'm right out the door behind you. Heading for New Orleans and the Crescent City Blues and BBQ Fest. But before I go I have a few meals to make. Tonight is going to be a remake of last night. I made an Italian suasage stew with cannellini beans, tomatoes and sage and garlic last night. I'm going to take the leftovers and add some onions and celery and then shrimp. I'll serve it with

Well, it all depends on if we go out tonight. The bf is a little antisocial/introverted, but depending on if other friends head out to the First Friday Art Walk in town (all the galleries open up and have snacks and wine - just a big monthly hurrah downtown), I may or may not be willing to devote a lot of time to dinner. If we're staying in/having some folks over, I'll be roasting or beercan grilling a whole chicken with zucchini gratin. If I'll be going out, I'll probably do whole wheat rigatoni with ricotta and roasted acorn squash.

Roasted zucchini, yellow squash, and mushrooms; grape tomatoes; pan fried chicken tenderloins that have been marinated in sriracha, shoyu, garlic, and ginger; brown rice. For dessert, peppermint ice cream.

Last night I roasted a butternut squash and caramelized some onions. I think I will make a lasagne out of it. I am going to make a Bechamel with sage and black pepper, and I was thinking about using Gruyere as the cheese. any thoughts?

I thought I was going to be eating frozen dinners tonight, but on the way home I impulsively stopped by Reading Terminal Market and picked up some things for the weekend. Now there's oxtail and vegetable stew simmering on the stove, and I'll be serving that on rice.

Our chef de cuisine whipped up some corn bread (using my recipe) with a saute of rappini and our homemade chicken sausage prior to service for everyone.
During service I made some spaghetti squash ravioli with a saute of peas and pancetta.
and now that I'm home I've got some buffalo wings and blue cheese working.

I had pasta dinner with my crew team tonight. We have a regatta this weekend, so we were partying beforehand. There was caesar salad, spaghetti, tomato sauce, and garlic bread. There was also crownies for dessert(cookie dough layered with brownie batter)! It was food made with little skill ( a few college guys made it) and with cheap ingredients, but the atmosphere of friends squeezed in a tiny apartment made the dinner one of the best I've had in a while.
I guess this isn't dinner, but I had a second dessert because it is crepe night at this nightlife place on my campus. I had a crepe with strawberries, blueberries, bananas, and chocolate sauce, topped with ice cream and whipped cream! Awesome day today!
