What's for dinner 10/22?

If these posts are stopping/slowing down because everyone is kind of sick of them, let me know! Until then, I'll pick it up if I notice there isn't one for the day (if I'm paying attention :P).

Tonight at my house: spaghetti with portabella mushrooms and the last of the leftover roast chicken (about one breast) with red sauce, plus the obligatory dusting of parmesan.

I had greens and beans: garbanzo's (that took FOREVER to cook) and kale with lots of garlic, red pepper flakes, olive oil, and just a bit of parmesan. I also had a pretty hearty serving of zucchini bread for dessert.

I made pizzas with a honey-whole wheat base, chopped fresh tomatoes, fresh mozzarella, gouda, mature cheddar and parmesan, topped with sauteed garlic mushrooms and thinly sliced chorizo, with a big salad on the side. I really like whole wheat as a pizza base, because the crust has a nice chew, and you can add more yeast for flavour.

Husband made A LOT of stir fry with 1-1/2 lb of beef, 5 broccoli crowns, and 1-1/2 lb of asparagus. I had 2 bowls, he ate the rest.

A saute of Shrimp, tomatoes, baby peppers, and the veggies in the fridge, Deglazed with white wine over rice

last night was supposed to be 'easy breakfast for dinner', and it was, it was just involved. Sunny side up eggs, roasted asparagus, sliced tomatoes w/feta, bacon, sauteed mushrooms, fried potatoes...

we got a bit carried away, but had fun in the kitchen together!

It was my husband's birthday last night so we splurged a bit. Grilled steak with shitake mushrooms and cippoline onions for the guys, scallops and shrimp with vermouth, lemon and capers for me and my husband with jasmine rice, bruschetta for a starter and a salad on the side.

Pan-fried tilapia with a cornmeal crust. On the side: spinach sauteed with red onions, pine nuts and raisins.

@hungrychristel--it was pretty darn tasty! Now if the kids would just stop bickering during dinner...

We had bibimbap, a Korean rice bowl loaded up with veggies and spicy red chili paste with tteok bogi (boiled rice cakes in a spicy red sauce). Kind of a pain to make, as it involves lots of chopping and stir frying things individually (3 pans going at once!), but satisfying, and made enough for 2 dinners and 2 lunches!

A grilled cheese and i opened a can of mexicorn. Lord, why am i even posting this?? :)

Bibimbap sounds good. With the weather hopefully cooling down, I'll have to remind my husband to make some up in the next few weeks.

We haven't made bibimbap a while since we have to call 2-3 days ahead to get our meat yakiniku cut (wafered) since no one else in Cleveland does this fresh.

@BakerPhlebo: LOL - eating corn out of the can isn't that bad. :)

We ate at the dining hall so that I could come home and get ready for Girls Night In...it was pasta-what a surprise!!
I love these posts too!!

Shredded leftover roast chicken and pan fried onions, spicy black beans, heaps of guacamole, and red leaf/ watercress salad, over buttered sprouted corn tortilla. Plus greek yogurt and cheddar for me... (dairy yes!)

I cooked a brisket on the grill- not sure if it qualifies as a 'BBQ' although it did cook for 5 hours. Might be the last grilling in NYC until spring. Smashed potatoes with butter and cheese, and broccoli.
