what's for dinner 10/21?
So I realize this might be a little late for a lot of you since I'm on mountain time and just finished eating ... but ... what's for dinner tonight? (I didn't see one for today, mods please delete if I've accidentally duplicated a post for today)
I made a random fridge cleaning soup, with sweet italian sausage (3 links), rainbow chard from the garden sliced into ribbons, vegetable stock, and about 1/2 c of white rice. I topped it with croutons made from stale potato buns and parmesan cheese, yum.

We smoked a pork shoulder this weekend and still had a lot of leftover pulled pork. we already had pulled pork sandwiches on homemade buns, so to change it a bit I made it into soft tacos with tomatillo salsa (just because I found great tomatillos and cilantro at a farmers market today. too bad they can't grow lime)!

Dining hall and I am struggling to even try and remember what I ate. Yes, that is exactly how good it was. @radley24 I would have given my left arm to have homemade pierogies.

Chicken soup and garlic bread. Both of us are sick...and we are worried he has mono! Last night it was tomato soup and grilled cheese. It was supposed to be a fancy dinner since it was my birthday, but ohhhh well.

Grilled chicken (the weather's still nice in California) with homemade BBQ sauce, my grandpa's potato salad with extra dill (because I love it), and leftover mac and cheese. It felt particularly heavy, so I didn't even eat any of the chocolate chip zucchini bread I made last night. Maybe tomorrow ...

I made up sandwiches that were left over from the Weekend Cook and Tell -- grilled eggplant, pesto mayo, ciliegine mozzarella, on toasted sour dough with iced tea. It was too warm and sunny yesterday. Ugh. Bring back my overcast 50 degree weather!

Missed it yesterday, but for dinner last night i cut up two potatoes and some smoked sausage, butternut squash, red, yellow and green pepper and onion, tossed that with olive oil and balsamic vinegar, salt and pepper, all together in a casserole dish and stuck it in a 400 degree oven for an hour. Verrrrry good!!
