What to do with a bunch of dill?
I have a bunch of dill leftover from another recipe and don't want it to go to waste. What do you like to cook with dill?

It's great with fish. I recently cooked a whole fish in butter with a bundle of dill in the center. Also great with eggs or added to potato salad.

I tried posting and got an error message so here I go again...
I love it on fish but it's also good on potatoes (roast with some butter or olive oil and then toss with fresh dill right before serving).
It also dries really well so you can hang it up (makes the kitchen smell really good) and use it at another time.

It's really good with carrots. Steam some carrots in a small amount of water in a covered skillet and when almost done (to you specifications) uncover and add some butter or olive oil and cook until the water evaporates. Add chopped up dill at the very end, a minute or so before you take it out of the pan. Green beans done the same way are tasty, too.

I was going to say with potatoes and eggs, but people already suggested it.
I love cucumber/radish/sour cream/dill salad.
Also, you can make a healthy dip with yogurt and a ton of dill.
or what about dill pesto?
I also made lemony dill sauce, which goes great with shrimp or chicken or vegetables.

Dill pickles!
Boil half and half 5% vinegar and water with salt to taste, pack a jar with kirby cukes, or slice up regular cukes to fit, add a few cloves of garlic and a bunch of sprigs of dill, then pour the vinegar over them. Seal the jars, and wait a few weeks. Yum!

sliced summer squash and onion sauted, leftover rice added, black pepper and lots of dill. Serve with sour cream.

All of the above - and I recently added some per recipe into a veggies-and-grains curry. It added a nice additional flavour.
Egg, chicken, or salmon salad all do well with a bit of dill.
Tomatoes sprinkled with salt and dill, if you have some late-season toms.

My aunt makes a really good salad with dill:
Romaine lettuce, chopped dill, parmesan shreds & croutons
Dressed with a lemony vinaigrette.
A little bit unusual, but not too weird, and quite refreshing.
