What Are We Eating Today-10/14

How I love these posts...Seems like it's my turn to get the ball rolling...so here goes..

A grazing type of day today:
Breakfast- a kiwi, cactus pear & an orange and 2 eggs...

Lunch-leftover greens and beans-escarole and canneloni beans sauteed in olive oil & garlic and crushed red pepper flakes

Snack-hummus on some crackers

Dinner-Hadn't given it much thought yet. I'm thinking butternut squash soup or roasted red pepper tomato soup-something light and maybe a couple of homemade double chocolate chocolate chip cookie with walnuts.....

Breakfast: cereal (Fart Smart as the BF insists on calling it) and a hard boiled egg
Snacks: baby carrots and an apple
Lunch: leftover pork tenderloin w/baked beans, barley and asparagus
Dinner will be: roasted bone-in chicken breast with stuffing (not homemade) and broccoli in some shape or form.

BUT what I'm really excited for is that I'm trying out the pear, pecan, blue cheese quiche recipe from a couple of weeks ago, mmmmm

Pumpkin turkey chili (thanks Kristen!) is on the stove as we speak. Can't wait.

Breakfast--just a diet Pepsi.
Late lunch--1/2 a turkey sub with a few potato chips
Dinner will be cheese tortellini in a creamy sundried tomato wine sauce with green salad and homemade rolls.

So far:

2 rice cakes with 2 tbsp eggplant hummus
oat bran with almond milk and banana
coffee with soy milk, mashed butternut squash, hopping john
apple, grapes
oat bran with almond milk

Dinner might be more hopping john, I haven't decided yet.

Just finished lasagna that I had made on Saturday.

Breakfast: nonfat greek yogurt with honey and the seeds of half a pomegranate
Snack: An apple and a cup of tea
Lunch: Leftover cauliflower gratin
Dinner: ??? My roommate wants to make celery root gratin, but I think lunch might already have put me over my creamy-cheesy threshold for the day. I'm tempted to throw together my favorite dinner of cottage cheese and peas, with dry whole wheat toast. Mmmm...

Breakfast: somen in matsutake broth with mizuna and beaten egg

Lunch: zucchini, yellow squash, and grilled chicken with dragon unagi roll and mango matcha lassi

Dinner: oops...we're still deciding. We were outside talking with our neighbor for the past 2 hours and lost track of time. By the time we parted ways, we could barely see each other...

-small bowl of peanuts and chocolate chips
-pho with rare beef and tripe, lots of sriracha
-crummy salmon caesar salad from Whole Foods
-cauliflower soup & ciabatta

One cake donut rolled in sugar...warm.
Two peanut butter cookes...warm.

well I've been sick with a bad cold for the past 3 days, so I just ordered out for wonton soup and mooshoo chicken. There is absolutely no food in my apartment and I've been subsisting off Carr's water crackers with the dregs of the peanut butter jar today.
@memt7 - I have that pumpkin chili on my to cook list, let me know how it turns out for you.

Wasn't finished
Pulled pork, nekked.
Fries.
A piece of buttered toast.
Two brownies.

B:cereal (fart smart...) and 2 sunny side up home grown eggs with butter
L: leftover roast chicken with polenta
D: basmati rice with peas, tofu in bbqsauce (alton brown) and pan-seared brussels sprouts in mustard and honey sauce

You all are so healthy, again, I am embarrassed to tell what I have eaten.

Breakfast-my own bread with Irish butter
Lunch-5 nasty stuffed shells with the cheese stuff scraped out (dininghall)
Snack-GIANT cupcake from Whole Foods (made me ill but ate the whole thing!!)
Dinner-split pea soup, white bean basil hummus with carrots and snap peas, ciabatta with hummus

Ok I feel better about myself---Look at that-pretty healthy eating!! I just wonder what I have forgotten that I shoved in my mouth at some point during the day!

Breakfast- I wish...
Lunch- Salad Bar (lots)
Snack- 2 pieces buttered toast
Dinner-Italian Sandwich from Domino's (wondering how that will taste)

breakfast -- homemade frappuccino {instant coffee, ice, milk, sugar in the blender}

lunch -- gefilte fish and a roll from zabar's

snack -- raspberries and an apple at the farmer's market

dinner -- stir fried tatsoi, roasted cauliflower, yogurt with freeze dried blueberries for dessert.

@memt 77-I have seen the pumpkin turkey chili appear in a few posts--that is on my "to-do" list this week..along with a butternut squash mac and cheese..

brunch- slice of death by chocolate cake @ work
dinner- leftover chili over a baked potato (coated in oiled & kosher salt before baking) and salad..

it's sad to say my undergraduate days were so much healthier..i hope that if i get into grad school i'll return to my 3 squares and regular exercising! wish me luck!

update-
Domino's sandwich was gross!!!
The genius "cook" put marinara sauce on it. (an Italian sandwich)
So much for dinner...
I guess I'll do the work tomorrow night as usual, but worth it!

i made a huge pot of chicken paprikash. with sour cream gravy..... my 86 year old aunt and my mom (84) -- loved it as it is the food of their childhood and culture. i served it with rice (my OH has to have his latin style white rice) ... i would have made it with noodles of dumplings.... we had some fresh, local stringbeans which were delicious. the last of the season .... a bittersweet moment.

Peeps. I made the pumpkin chili over the weekend and I liked it but I was the only one. You must warn people that it will taste sweet...it looks like chili that would be spicy and I think that is what threw the BigMan. Even the bottomless pit 13 year old did not like it. That being said I liked it and ate it till the dog ate it. He seemed to like it.

Just got home from going out to dinner - we ended up going out for Vietnamese after shopping for a doggie bed (a cushion she won't tear up in 20 min).

I had bun thit nuong (vermicelli with chargrilled pork, cucumbers, daikon, carrots, Thai basil, bean sprouts, lettuce), husband had pho. We split 2 goi cuon thit nuong (chargrilled pork summer rolls) and banh xeo (crepe).

granola bar, oatmeal with banana, soy latte, apple, black bean soup w/ bread and crackers, cereal w/ milk, veggie wrap

Right now I am munching on Trader Joe's Teriyaki Turkey Jerky -- It is so good!! Unfortunately it is really expensive. I wish I could find a lower cost alternative that even came close to this.

Breakfast - raisin brand cereal with skim milk

Lunch - Slim-Fast homemade vanilla shake with half of a small banana

Supper - turkey chili with a side of Vlasic sweet gherkins (sweetened with Splenda)

I was a bad boy this past weekend.
