Weekend Cook and Tell: Pumpkins Everywhere!
Welcome to the Weekend Cook and Tell. Every Wednesday we page through the food sections of various national newspapers to create a weekend cooking project. We hope you will cook along with us and share your experiences, recipes, and photos here.
It's no secret that we are big fans of pumpkins at Serious Eats. We've shared entire weeks of pumpkin baking recipes, held pumpkin carving contests, and even reviewed pumpkin smoothies. So, continuing with the obsessive theme, this week's Weekend Cook and Tell challenge is all about pumpkins!
Marilou Suszko of the Columbus Dispatch wrote a wonderful article called "Beyond Porch Appeal" in which she demystifies some of the more exotic pumpkins out there. Sure, these orange orbs look nice sitting on your porch, but they taste pretty great, too. Why not move decorative Halloween pumpkin into the kitchen come Sunday morning?
Do you hold the secret to particularly wonderful pumpkin pie? Does your pumpkin find its way into a savory concoction, maybe ravioli or a curry? Or perhaps a pumpkin puree spiced with all sorts of autumn flavors? This week we want to hear all about your favorite pumpkin recipes.

Thai-spiced pumpkin soup is always a hit. But after trying out a new recipe last night, I've been inspired to do a cinnamon rice pudding in roasted pumpkin thing.

I've been pigging out on chocolate chip pumpkin bread. It's a King Arthur recipe from one of their books, can't remember which one. The loaf is very tasty, I like to use Ghiradella 60% cacao chips to make it extra delicious.

I already commented on the dinner thread, but I made pumpkin biscuits to go with the beer chili last weekend.
I was going to make Orangette's sweet potato biscuits, but got lazy after carving a pumpkin, so I used pumpkin puree in place for cooked, pureed and cooled sweet potatoes. My bf confessed that he doesn't like anything too pumpkin-y, but he liked the biscuits.
I also made these pumpkin scones (sans raisins) a while ago and loved them!

Tomorrow I'm planning to make the Pumpkin Turkey Chili that was posted in the Healthy & Delicious column a few weeks ago, for Sunday football. I love the idea of using the healthy but rich pumpkin puree to thicken the chili, and I love adding a touch of sweet to a savory dish. We went a bit squash crazy today.
With the kabocha we bought, we're planning on preparing it tomorrow night the way my mother used to make it -- kabocha pan fried with shoyu. Eaten over fresh steamed white rice, it's one of my comfort dishes.
Along with this will be shoyu grilled asparagus, roasted zucchini, yellow squash, brussels sprouts, mushrooms, and red bell peppers.
At least that was we planned on doing with all this. The more I think about it, I just want to make tempura out of all of them (minus the brussels sprouts), dunked in TONS of grated daikon and shoyu.

Last night, I roasted two medium-large pumpkins I bought from the 53rd st farmers market in Hyde Park, Chicago and made a double batch of Heidi Swanson's Thai-spiced pumpkin soup (recipe: http://www.101cookbooks.com/archives/001525.html). I topped it with the pumpkins' seeds, which I had roasted with raw sugar, salt, and olive oil (they tasted like kettle corn!).

I made pumpkin cookies with peanut butter chips. The original recipe included chocolate chips, but I just made a batch of regular chocolate chip cookies, so I wanted something different. The peanut butter chips were the perfect match for the cookies. They were great.

I cooked my first pumpkin over the weekend: Indian styled pumpkin, bulgur & lentil side dish.
Also roasted the pumpkin seeds. Basically, to me, it's just another winter squash.

I forgot to add that the reason I ended up making the pumpkin cookies was that I first made Paula Deen's pumkin gooey butter cake and when I went shopping for the canned pumpkin, I forgot to check what size can I needed. So I bought the big one and needed the small one. The cookies used up most of the rest of the can. I've got a little left...sigh.
I do have photos, so if I get ambitious, I'll get 'em off the camera and onto photograzing.

I am making this pumpkin lasagna right now and it smells delish. Very novel idea! (And yeah, I know it's RR....but this is much more interesting and different than most of her stuff!)

No camera, but ...
My roommate and I held a Halloween Pregame Potluck, for which I made pumpkin and black bean enchiladas (and I didn't skimp on the chipotle, either).
And I've been eating mashed pumpkin in my lunch everyday.
