Uses for Fennel Tops?

So, I made a dish a few days ago that used a fennel bulb. I saved all the tops, thinking they must be good for something...but I still don't know what the something is!

Anyone have any good suggestions for what to do with a bulb's worth of fennel tops?

A little late for this but I like making roasted fennel. Chunks of fennel bulbs are coated in olive oil and roasted in the oven. When they are tender, I top the bulbs with the fennel fronds(none of the woody stems, just the feathery fronds) and finely grated parmesan. Outstanding vegetable side dish.

Other times I will use the woody stems and fronds in stock.

I use them in the steaming liquid for fish and veggies.
It is a great aromatic.

If I can't use them right away, I'm not likely to save them. I like to garnish with them and as Jerz said, they're a beautiful aromatic to add to poaching liquid.

Ditto on using the tops with fish. You can tuck them into the fish as well, or lay them decoratively on fillets when you broil or bake fish. Chop a few and add them to salad for an unexpected taste. I've got a recipe that roasts potatoes, onions, and fennel with bay leaves and it's decorated with the fronds, so you can just flavour a simple potato with the fronds. Eggs would be another use, a bit of the chopped fronds over scrambled or an omelet.

Garnish, toss with hot pasta, stir into sour cream with other seasonings for a dip or potato topping, add to a gratin, great in eggs, on fish, as a fennel-tartar sauce.

All the suggestions above are great too.

i freeze them and use them in my veg stock...mmmmm
