Too much lettuce!

I have a huge bag of baby greens that were supposed to be a base for a salad at a large dinner party last night. Plans fell through and we went out... But now I don't know what to do with the greens before they go bad. Any ideas?

Juice them with some apples (if you have a juicer...)
Put them in your sandwiches for lunch every day...
use them as a base for grilled meats...they'll wilt just a little under the hot meat and add a flavorful, healthful bite to your meal...I especially love doing this with arugula.

Use them tonight in a dinner salad. Or toss into soup, a stir fry or with pasta.

Make them into a wilted lettuce salad with warm bacon dressing.

share with your friends, or neighbors. Thats what I do when I have excess food so I don't waste. Everyone appreciates the kindness.
