Pork Tenderloin from the New Amsterdam Market

So I went down to the New Amsterdam Market today to watch Josh Applestone and Tom Mylan take apart a side of a pig. After purchasing some raffle tickets, my boyfriend and I were the lucky winners of the pork tenderloin bag. When is the latest we can cook this? Also, any cooking suggestions?
