Hen of the Woods

Hi, I'm new here, my name is Bobby but I coudnt sign on as such--so goes the two 6's to add to confusion.
Anyway, this year has brought many clusters of Grifola Frondosa. After 2 evenings of cleaning, sorting, drying, and chasing bugs, I have 2 half gallon ball jars vacuum sealed full.
Last year I had only one half gallon most used in cooking and sometimes tea, what do I do with the other?
How many here use this mushroom and what do You do with yours?
