Persimmons...
We just received a gift of fresh ripening persimmons from a neighbors yard and they look wonderful...any good cooking or recipe ideas?

I agree with eat them straight. Here's a poem from Literature From the Axis of Evil--Falling Persimmons.
Falling Persimmons

Persimmons fall
thump, thump,
where the demarcation line cuts
across the weedy hill, above the Kwansan ferry.
The owner's gone;
only the house remains.
For many years, the persimmons have ripened
in solitude and fallen mercilessly on the earth.
If I stretched out my arm, I could pick
the ripe red persimmons.
But the barbed wire fence along the demarcation line
cuts my heart, keeps me from taking even a step.
O, persimmon tree!
you also suffer from division.
I wonder when the day will come
for the owner to return, climb your green boughs,
and harvest you in happiness.
The girls in this village used to marry
before the feasting table
on which were heaped delicious persimmons
then cross the Imjin River, bound for Paju.

I eat them right out of hand. I'm assuming these are traditional Hachiya persimmons and not fuyu persimmons?

oh wait, are they hachiya? I believe they are a shibugaki variety (super tannic and inedible until it's super ripe or dried or soaked in liquor). Fuyu is an amagaki (sweet persimmon) and can be eaten straight up.
There are a lot of funny stories about kids stealing their neighbor's shibugaki thinking they are amagaki...lol

Yes, if you can, eat them out of hand.
You can make persimmon butter, just like apple or peach, and it is great as a jam, dessert topping, ice cream topping etc.
Add chunks to an apple crisp with very tart apples and a nice crumble top.
Lay slices on top of a pork roast as you cook it, or make a compote to go with it or chicken etc. Yummy.
Put in pie with other fruits.
Roast with squash wedges/chunks and sweet sausage (or just the veg).
Fold into a spice bread recipe like you would apples or cranberries.

For me- persimmons reminds me of Xmas- Persimmon bread was our tradition. Super great spice bread with persimmons and golden raisins.mmm If they are not the japanese persimmons you can freeze them whole and when you defrost them they are perfect for using in baking just discard the skins.

My tomato shaped persimmons have been sitting out and are now turning a lovely shade of yellow/orange blush...I think they are finally getting ready for use.

I bought fuyus. I saw them on sale and figured it was cheaper to experiment with them now. I love my regular persimmons. This will be interesting.
