Need Recipes for Beets

I received a bunch of beets with greens in my CSA box. Any ideas on what to do with them?

wrap them in foil, stick them on a cookie sheet, then roast them until a knife will slip easily all the way through. i like to toss them with sugar and lemon juice and let them marinate for a bit.

the greens can be sauteed, steamed, anything you would do with any leafy green. they're quite good.

I just rinse them off, leave the roots, cut off the leaves about an inch from the beet, boil them until they can be penetrated with a knife, rinse and run them under cold water while you slip off the skin, root and leaf nub. Add a bit of butter and salt and eat hot - especially good with other Fall vegetables such as squash, cabbage, carrots. If I have a few, I will cook them up and reheat in the microwave as needed.

Also, I don't have a recipe but it would be easy to find one for pickled beets.

I like them roasted ~ see @bareneed above ~ and then sliced, cold, in a salad with good greens, nuts, blue or feta cheese and a good oil and vinegar dressing.
Pickled beets with hard boiled eggs were a spring/Easter tradition in my family. Still make this today...

I love pickled beets & roasting beets, as bareneed and cybercita suggested, and then my new favorite way is the shredded beet and carrot salad from chocolate and zucchini.
and maybe the most classic preparation is beets with horseradish?
Finally - I think jessica seinfeld has a recipe for beet pancakes in her "let's hide the vegetables so the kids don't know" cookbook. You throw some beet puree in the pancakes or something, and you can freeze the pink pancakes.
I've been wondering if there's a dessert where you can throw beets in, as they are so sweet and yummy, like beet cake instead of carrot cake.

oh yeah - and don't throw the leaves away! you can make a salad or simply saute with olive oil, salt and pepper, and throw into your pasta. so good! (but use them up right away)

Don't forget about the greens. Trim and wash the beeet greens well, then do a quick saute' in olive oil and garlic, saute' in butter or steam-braise and add a dab of butter when done. Or add to a stir fry. Tuck in an omelet, toss with pasta or eat like any other cooked greens.

Beet greens are heavenly.

Mmmm, give them to me if you don't like them! I roast them like cybercita says, and just toss with lemon, olive oil, s&p, a few herbs if I'm feeling fancy. I could eat pounds and pounds like that.

Borscht or use them in a salad like this one: Apple Beet and Avocado Salad.

Beet greens are delicious.
