Hen of the Woods
Hi, I'm new here, my name is Bobby but I coudnt sign on as such--so goes the two 6's to add to confusion.
Anyway, this year has brought many clusters of Grifola Frondosa. After 2 evenings of cleaning, sorting, drying, and chasing bugs, I have 2 half gallon ball jars vacuum sealed full.
Last year I had only one half gallon most used in cooking and sometimes tea, what do I do with the other?
How many here use this mushroom and what do You do with yours?

I don't have the good fortune of easily accessible wild Hen of the Woods, but they are sold in my supermarket. I saute them with garlic and shallots most often. They are also great with asparagus in stir fry.
If you Google (or use the site's search function) for Anthony Bourdain and Mushroom Soup, you'll find an easy to make mushroom soup. It calls for button mushrooms, but you can sub some or all of those mushrooms for Hen of the Woods. Or make it as is and garnish the soup with sauteed Hen of the Woods. You could make a large batch of the soup and freeze it for later use (it makes a great casserole base).

I looove maitake!
My fav dish is just sauteed in butter and soy sauce (trust me it's good!).
They are fantastic in Asian dishes (I heart maitake tempura) but also great in pasta dish, omelet, quiche, etc where you'd use regular mushrooms- just more flavors!

Saute, cream sauce or a litle white wine, served over rice or pasta
Diced, cooked and added to risotto.
In a stir fry.
Soups would be at the top of my list too.

Sorry, busy. I used the Vita-mix to powder some of the mushrooms, added a smidge to some augratin potatoes, not sure I can even tell its in there.
About three days ago I added pieces to a chicken-barley soup, Yum!
Trying to figure how to put this years find (photos) on the web site : Northeast Mushrooms.
I'll let my taste-buds decide which is next...Hens in white sauce over chicken pizza, or simple stirfry. Hmm?
