Gluten Free Dessert Ideas?

Cooking for a gluten free friend in a couple of weeks and would love to include dessert.

Very open, no other restrictions ...

you could always just do some fresh fruit?

There's lots you can do!

- pudding
- fruit crisp (use rolled quinoa or gf oats for the topping, or just use chopped nuts and brown sugar)
- mousse
- ice cream (depending on flavor). Turtle Mountain does have a gf cookie dough ice cream
- make a pie using gf cookies for the crust

how about a flourless chocolate cake? Only 3 ingredients, super easy to make and very impressive!

Or fruit dipped in chocolate?
Or caramel dipped apples?

Two alternatives that are not just cut up fruit on a plate.

Poached pears with blue cheese - to me it tastes as if it came from a restaurant.

I like to bake brownies and substitute white rice flour for the all purpose flour. They were famous among my gluten-free ex's family.

Carrot cake also adapts well to being made with a gluten free flour blend.

I use Pamelas mix of Gluten free flour - they are to die for, I usually half the recipe as it makes like 16 super large muffins, also you will need to add more flour then the recipe calls for, just keep adding until it seems "right" but the icing is the bomb. In fact you could simply make the icing and put it on a spoon and people would love it.

Elizabeth David's Flourless Chocolate Cake

Ingredients

4 oz. bittersweet chocolate
1 tsp. vanilla
1 tbsp. brewed espresso (or any other strong brewed coffee)
1 tbsp. brandy
6 tbsp. butter
1/2 cup sugar
1/2 cup ground almonds
3 eggs, divided

Instructions

1. Preheat the oven to 300°F. Butter an 8-inch springform pan.

2. In a heavy saucepan over low heat, melt chocolate with vanilla and brewed espresso and brandy.

3. Add butter, sugar, and almonds and heat the mixture until the butter has melted. Remove the pan from the heat and cool slightly.

4. Beat the 3 egg yolks until they are lemon colored and stir them into the chocolate mixture.

5. Whip the 3 egg whites until they are just stiff and fold them into the chocolate mixture.

6. Turn the batter into the pan and bake the cake in the middle of the over for 45 minutes. The cake will have some cracks on top, and a tester inserted into the cake will not come out clean. Let the cake cool completely on a rack and remove the sides of the pan. The cake will rise and then fall.

I put together a pretty big selection of stuff, but the Gluten Free Girl brownies were the biggest hit among both gluten-free AND gluten eating people! Really easy too. I topped them with an Irish cream flavored buttercream icing made from butter, confectioner's sugar, and St. Brendan's Irish Cream (while Bailey's doesn't have anything in it that *should* have gluten, St. Brendan is certified gluten-free). You could easily leave them plain or do an icing without the Irish cream to make it alcohol free.

I used to make a gluten-free chocolate mousse pie using ground gluten-free cookies for the crust and a "mousse" made from silken tofu and melted dark chocolate. I will try to find the recipe -- most people can't believe it is gluten free!
