Ebelskivers
In our buttermilk thread, someone mentioned making ebelskivers.
Not having a special pan, I'm wondering if I can make them in a skillet like a pancake, would a muffin pan work or should I just pass on the recipe and make pancakes instead?
Looking for some feedback from all the ebelskiver lovers out there.

I'm the one who mentioned that I made them. I don't think anything can replace the special pan, so if I were you, just go with pancakes. I just used the recipe that came with the pan I bought, and they were basically pancakes shaped like donut holes. I was hoping for something a little different, so I will be trying to locate some different recipes. The pan was really cheap, just 7.99 + 3.99 for shipping...search on amazon.

A few years ago, one of those knockoff cookware companies was selling something called a "Pancake Puffs" pan with a set of cheap plastic accessories - but the pan itself was a good sturdy cast-iron aebleskiver pan. I waited till after Christmas that year and snapped one up for ten bux. Never regretted it. I generally make up a batch of cornbread batter, or this sweet potato pancake recipe - http://bit.ly/2mfb2n - for "skeevers," as we call them at our house. Mind you, I use 1 c. flour, 1 1/2 tsp. baking soda, and a little salt instead of the pancake mix.

there was an article on serious eats awhile back about the pan. i have one and it is awesome. fresh fruit inside (bananas, blueberries) are the best!
