Chicken Marinades?

One of my favorite weeknight dinners is marinated, baked chicken. I mix together a few ingredients in the morning (right in the pan), toss in the chicken (thighs for us) and refrigerate. Once I get home, I chuck the pan into the oven and go walk the dogs. 45 minutes later, dinner's done (well except for figuring out some veg).

Here are my top three (sorry no exact recipes, I usually just wing it):

Lemon-Garlic
Fresh lemon juice, fresh garlic, olive oil and rosemary sprigs.

Ersatz Hawaiian
Pineapple juice (I keep those single serve cans in the pantry just for this), soy sauce, ginger and garlic

Devilled Chicken (this one I actually do right before baking, rather than marinating)
Slather chicken parts with dijon mustard, roll in bread crumbs (panko is excellent, as are seasoned), bake.

Bottled Caesar salad dressing...

Garlic + EV olive oil + soy sauce + wine (red or white and just a splash). A couple of shakes of dried basil and/or oregano are optional.

Lime juice, soy sauce, ginger, garlic, red chili paste (or garlic chili sauce), a dash of fish sauce, a little brown sugar, and fresh cilantro.

Indian: tbsp.(more or less) each of kosher salt, paprika, chili powder, garlic powder, ground ginger, coriander, 1/2 tbsp. each of garam masala, turmeric and cayenne pepper. Add enough plain yogurt to coat the chicken and mix it really well with your hands. I use about 10 chicken thighs. Overnight is best, but I have done it in 6 hours.

Asian: Orange juice, dry sherry, juice of 1 lime, soy sauce, lemon/lime soda, salt, pepper, garlic powder, 7 spice seasoning, ground ginger.

WTF!!!: 1 bottle of malta hatuey (non alcoholic malty soft drink), spiced rum, juice of 1 lime, allspice, salt, pepper, garlic powder.

Yum to all of you!

I use a Dean & Deluca recipe for boneless thighs. Just mix & marinade - sometimes I only get the chicken in there for 20 minutes and it's still delicious.

2 cloves garlic, minced
2 tablespoons soy sauce
2 tablespoons sugar
1/4 cup grated ginger
1/2 cup hoisin sauce
1/4 cup water

Broil thighs skin side up for 7 minutes, flip and broil for another 4, and flip again to crisp up the skin.
