Buffalo food... any ideas besides wings.

We are having a couple over on Sunday to watch the Buffalo vs. Miami game. He grew up in Buffalo until age 15 and she left around age 6 and still has family there. I would like to make something indigenous to the area in addition to wings. Any SEers from the area? I need some ideas. I could just ask them but I really would like the element of surprise. I am not making a dinner per se, just grazing so anything goes. I have planned the wings, Cuban sandwiches, a tres leches cake, beer and a pitcher of mojitos. I would like to balance out the menu with something else from Buffalo.

I know its tough to find hot dogs like these outside the Western NY area, but you might want to look. hope this helps.

There are some decent Buffalo wines, even one labeled with the BIlls or Sabres logo...

@zucchini That sounds doable. Even though I have planned the Cuban sandwiches, more meat sandwiches is perfectly acceptable for men and football!
@Cary while I do try and accomodate my guests this is a Miami Dolphin house. No other logos aloud! :b Besides they are not wine drinkers.

Sorrento cheese is made in Buffalo. Turn some of their string cheese into Mozzarella sticks, great with wings.

I grew up in Western, NY (about 2 hours from Buffalo) and the best thing from that area is not wings. It's beef on weck.

This is a version of my mom's recipe:

1 large roast
s&p
beef stock
kummelweck rolls

Season roast with s&p and place in 450 degree oven for about 20-25 minutes, or until a nice crust forms. Drop roast in a crock pot and cover with stock. Simmer on low for 4-5 hours.

Slice meat thinly, dip rolls in the jus, pile on the meat. The meat is cooked to medium well this way, which is not traditional, but it's how I ate most beef on weck growing up.

Also spiedie's are popular. Although that's a Binghamton area item, a lot of folks in Western NY are familiar with and enjoy this simple sandwich.

@zucchini, that article and photos regarding "Beef on Weck/Wick" has almost convinced me to move to Buffalo. Wow, looks delish..!
It comes very close to resembling a French Dip Sandwich; it must be the roll.

That's very thoughtful of you, though there's a potential problem lurking. People are often very particular about their hometown foods, and you may end up just making him long for the real thing by serving him a lame though heartfelt rendition of, say, Beef on Weck.

I grew up in Philly, and I know I wouldn't want someone attempting a homemade version of the revered cheesteak, because I know that without just the right bread, meat, etc., it will just end up making me long for the real thing while I dutifully eat what my host offers. I've never eaten a homemade cheesteak that was any good at all, and even most restaurant versions outside of the Philly area turn out pretty bad renditions. I'd rather my hosts prepare foods that they're really good at than attempt something that won't hit the mark.

@Lorenzo Yeah, I get what you are saying. However these folks are very easy going and as we have known them for many years will get a kick out of the effort. Also, neither of them have been back for 10+ years and copious amounts of alcohol should temper the picky picky out of them! Oh, until you have tried my cheesecake hush yo mouth sir!! Just kidding.
But it's damn good.

@madeline your post left both myself and husband laughing so hard it hurt. When I first saw it I thought hmmm dip would be a good thing to add. Husband said so what is it? I looked it up and told him "Hey babe it's bison, for real!" He said you mean buffalo? Yup. He started laughing and was trying to wrap his head around the irony of watching a Buffalo game and eating buffalo. To which he added well maybe we should add some mahi mahi to the menu. We both wondered if the Indianapolis (Colts)/Denver (Broncos) have a horsey dip. Thanks for the heads up on the Labatt's.

Thanks to all who suggested the Beef on Weck. Husband saw that and ran to freezer and took out a beef roast. He wants it. BAD!! Since we have a slicer this should be good. Got a good tip on how to make the rolls from a Bobby Flay recipe. I may be making lots and lots of food. I do doubt any of it will see the light of day so it's all good!

Beef on Weck rules! Locally, Rockland Bakery's saltstick roll is a great option if you can't get to a Buffalo bakery.
