Blanking on Dinner
I need help. I cannot think of something to make for dinner tonight. My boyfriend is coming over, so it can't be my usual fried eggs and toast. No pork or shellfish (roommate keeps kosher), but does anyone have any suggestions for a fall-like simple dinner that is just the tiniest bit special. Also nothing that even remotely resembles chili, I had it for four meals last week. Thanks!

I have this recipe for roasted corn pudding in acorn squash on my list of things to make for dinner this week. Seems easy enough and a little fancy. I plan on serving it with seared scallops and a green salad - but you could serve another fish or maybe chicken with it as well.
I made poached salmon with a yogurt-dill sauce and roasted broccoli last week, very easy and very good.

How 'bout grilled ham and cheese (Cheddar, Jack, or Horseradish Cheddar) and sliced apple sandwiches on rye or some thick-cut bread? Slather on some really good mustard (cranberry-horseradish or some some other exotic flavor). Or try open faced, under the broiler. Add a tossed baby greens salad with chopped pears, walnuts, and crumbled blue cheese.
Add a good beer and some brownies for dessert, or apple pie or apple crumble (easier) a la mode.

I love ham and cheese, but unfortunately, it's not kosher (the whole meat and dairy thing, on top of ham being pig). I saw a recipe on SE last year for a pretzel crusted chicken. I made it and it was delicious! I would try that. Good luck!

yeah i could do something with turkey, i can definitely mix meats and cheeses since she won't be eating with us. i just generally tend not to cook pork or shellfish in the house since that bothers her. i like the idea of pretzel crusted chicken!

For a special meal, I like to do individual Wellingtons with whatever is to hand. Two filet mignons, browned, covered in mushrooms cooked with onions, garlic and wine, wrapped in phyllo dough and baked...you can do it with salmon, chicken or lamb as well. Served with creamy and cheesy mash and gravy with seasonal veg on the side. Be sure to wash the pastry with lots of egg and butter first. I know it's not terribly original, but I assure you it works (still married).

Sorry I read the original post so fast and missed the importance of kosher. (and then went on like a doofus to recommend ham...) My apologies.
For another day, you could try hot roast beef sandwiches with homemade baked french fries.
Or homemade tomato soup with some kind of grilled cheese (fancy cheese, really good bread, an array of interesting fruits and mustards.)

We're having Parmesan polenta, steamed arugula, spinach and broccoli raab with baked chicken!
But I love @moibec's idea for tomato soup and grilled cheese - this is one of my favorite meals!

fortunately, I love her more than I love cooking bacon. i always burn it and it gives me an excuse to order the grossest pork and shrimp filled things when we are out. thanks for the suggestions, polenta is delicious i might make that!

@CJ McD Nothing, that was the real problem. We wanted to eat before our fresh direct order arrived, so had to shop for groceries. BF requested penne with vodka sauce, so I made that. thats for the suggestions though, i am going to try the pretzel chicken later this week!
