Wine and Antipasto: Perfect Soulmates

So ---yeah--- it's monday.
I'm still salivating over my girly-wine night I had on Saturday.
T'was a blast. My girlfriend came in from outta-town. We used to bartend together for years so we share the same admiration for fermented grape beverages LOL

Since I knew she was coming; and I was on a limited budget, I made a cheese platter with Creamy Brie, Edam and a really nice Dubliner Cheddar (which: btw was delicous and had lots of those little yummy crystals in it)--and then I bought some grapes. I bought a bottle of my favourite-- Sileni: Pinot Noir and a Masi: Levari Soave Classico. She brought over a really nice Reserve Shiraz from (2006) but I can't remember which winery.

After a couple glasses: we decided to walk the stip nearby my appartment and made a pit-stop at this killer wine bar & eatery with a great view of the village.
We were semi-hungry but wanted a bit of a variety: I was really pleased with the antipasto tray. It had a great little combination of:

  • Capers
  • Havarti
  • Emmental
  • Pickled peppers (of some kind)
  • Apple Slices
  • Red Grapes, seedless
  • Lime Hummus
  • Kalamatas
  • Pita Bread/French baguette
  • So: I'm curious fellow-SE-ers; if you could plan such an evening
    ...how would you do it?
    What wines would you pick?
    What would be your perfect Antipasto/Cheeses to do?
