What's for dinner tonight-9/29

After a gluttonous weekend, it's exercise and tilapia in a horseradish sauce with spinach and roasted red pepper in foil. As a side dish, it's roasted asparagus with lemon, garlic and olive oil .....had butternut squash soup for lunch and salmon salad..

I've taken to cooking at night so that when I wake up late in the day, I don't have to do anything that heats up the house too much. Last night I made homemade scallion cheddar corn bread and a huge pot of chili, so that'll be awesome today. I'm also going to have tres leches cake at some point today because it's my dad's birthday and that's the kind of cake he wanted me to make. (I did that last night, too.)

Quite similar to italiancupcake; poached salmon with a greengoddess sauce (leftover dip that needs to be used up), spinach with lemon and garlic and fresh green beans with butter and parmesan.

@pumpkinbear...I have to make a tres leche cake for my mother next week. Let us know how yours comes out. I'll be making Rick Bayless's from Mexican Kitchen.

Tonight's dinner will be ribs with a dry rub and probably some corn on the cob and german potato salad. I'm trying to squeeze out those last drops of summer or at least use my grillin meats before I need to grill with a winter coat on,

Smoked salmon and gruyere "grilled cheese" on country bread with a simple side salad.

Huevos rancheros to clean out the icebox - leftover beans and corn tortillas, cheese, onions, a little tomato sauce and eggs on top.

I just pulled frozen split pea soup with ham from the freezer. We'll have it with homemade multigrain bread toasted and maybe crudite, or just leeks. Because for some reason, all i want is leeks. Braised by themself on a little plate next to a bowl of soup seems too weird though.

Turkey-Chicken burgers on lettuce leaves with hummus and tomato salad. If I am feeling adventurous I may go and buy a couple slices of an interesting cheese to melt on the burgers.

Potato leek soup with an arugula side salad and a slice of plum coffee cake.

Mustard and lemon pepper chicken breasts on rice.

And a beer.

Found low-fat kielbasa on sale 2-for-1; am pairing it with corn-and-jalapeno relish, possibly brown rice or quinoa or some crusty white bread!

@BananaMonkey-that split pea soup with ham sounds like that'll hit the spot-I wish I had some..it is cold & damp in NY...

@ec_washington - funny you ask, because last night was the first time I had ever made it and it was cobbled together from random recipes I looked at on my iphone at the grocery store when I saw some leeks and decided to make it. But it turned out delish!
Here's what I did:
Chopped up half a pound of bacon and let it crisp on med heat in a dutch oven. Meanwhile, I washed and chopped 3 leeks and peeled and diced 3 large Idaho potatoes. Then I removed the crispy bacon pieces to the side and threw in the leeks, coated them with bacon grease, turned the light to low and put the lid on for 15 minutes. Don't let the leeks brown. Then, since I had no chicken broth, I resorted to using a bouillon cube dissolved into 2 cups water. I added that to the pot, plus 2 cups water and s&p. I put the potatoes in and added half a teaspoon of sage, then let it cook at a simmer until the potatoes were tender - about 20 minutes. I turned the light off, threw half the soup into the cuisinart and pureed it up, then returned it to the pan and adjusted the seasonings. I served it with a drizzle of olive oil and a generous scattering of bacon on top. It was good because there was still texture - it wasn't all smooth.
Next time, I wouldn't really change anything, except would use real chicken broth instead of the bouillon cube. It would be good with some garlicky croutons and chopped parsley too, but I didn't have time for that.

I'm sorry, did I say sage? I meant THYME! and dried thyme was all I had.

No idea. Have class and tutoring until nearly 10pm...with no break. I'm just hoping a sushi bar is open late...

Dinner tonight is ordered in pizza and spaghetti from a really good Italian place here. It's been a long day of painting the living and dining room!

Lamb steaks cooked in a tagine with a spicy tomatillo sauce, carrots, and stuff. Barley couscous. Salad.

This is the first taste of the lamb I bought from a new source this year. Raised just a couple miles away. Just picked it all up today.

Campanelle with meat sauce and meatballs from a big batch I made and froze; some Romano I pulled out of the freezer and grated; and a loaf of my Italian bread also from the freezer. No salad - I just wanted carbs tonight.

Green chile made with pork. Also leftover beans.

leftover creamy potato soup with dill and two homemade pizzas:

regular - marinara, fresh mozz...

ricotta, basil pesto - paper thin slices of zucchini and fresh mozz... the crust was edged with sesame seeds... red wine.

a nice hunk of 85% dark chocolate (green & black) for dessert.

Grilled hamburgers (chorizo+chuck) with avocados, chipotle mayonnaise, jalapenos, lettuce, and tomatoes...

I've changed my mind and made butternut squash soup. It's on the stove as I type...

The kids ate grilled cheese sandwiches and soup, and we had some frozen lasagne rolls after we got back from "Meet the Teacher" night.

I made a big pot of turkey chili and Southwest cornbread. It really hit the spot. It will be better tomorrow night for supper.
