What's for dinner tonight???

Thanks to Banana Monkey for the resurgence of this thread, I'd like to keep this going. Tonight I am making cod with miso broth, leeks and shitake--got this yummy dinner suggestion right from yesterday's "The Come back Gator Pam" thread....I love to read what people are making for dinner as it gives me some great ideas if not for that day but another day....Most everyone has great dinner suggestions or innovative food ideas ...

Interestingly, I made French Onion Soup yesterday (for tonight) about 2 hours before the FOS post came up on SE. Just finished prepping the salad and croutons and grated gruyere. Should be good...I'm serving it in the same little Pfaltzgraff soup crocks my mom always did. : )

had some left over chicken so made chicken & rice soup, have some crusty bread, fruit for dessert.

I'm going to grind some chuck and make burgers on really nice kaiser rolls I picked up. Chips and iced tea and for dessert the last of the angel cake I made on Sunday.

Making a quesadilla with carnitas, pickled jalapenos, and a mix of shredded cheese and spices (cumin, oregano, garlic powder, cayenne).

Veggie and tofu fried rice

Roast chicken, braised cabbage, fresh baby carrots, Yukon gold potatoes and gravy - and, no, I do not eat like that every night! I am having company. Oh, I forgot, homemade brownies covered with chocolate chip and cappuccino ice cream. My blood sugar is already rising!

It's been a crappy week here, so I'm going for warm comfort tonight, Tuna Casserole with some sauteed kale to go along with.

autumn veggie burgers and another batch of the squash and potato gratin.

Sausage and cabbage soup, french rolls and coffee ice cream for dessert.

We're going to try the curried honey chicken again tonight. No evil hotdogs will be testing our resolve.

@Joyyy: Can you tell me about your autumn veggie burgers?

I'm on a ton of deadlines, so tonight I'm getting lazy: grilled ham and cheese sandwiches with Trader Joe soup- I haven't decided which kind yet.

@PumpkinBear - I spied them in bittman's HtCEVegetarian last week and decided I must make them. Haven't looked at the recipe closely since then, but it's shredded sweet potato, can of cannellin beans, 2 cups cooked chard (from my garden!), and other ingredients I can't remember off the top of my head. Hopefully it will be good, I haven't really dabbled in veggie/bean burgers yet so this is my virgin run :P

Mild Italian sausage hogies with homemade tomato sauce and shredded provolone.

Flounder with shrimp sauce; white rice; steamed broccoli.

BLT's with chips and Sweet Basil and Olive Oil cupcakes (leftovers from my party this weekend)

@PumpkinBear-TraderJoe's Tomato Red Pepper soup is delicious-I also love the butternut squash soup and love to add a little cream of coconut & some edamame to it.....tastes really wonderful....

raw shaved zucchini tossed with arugula and chopped tomato, topped with fresh pesto.

Cream of poblano soup, quesadillas, bacon-wrapped grilled dove, & gazpacho-inspired salad.

eggs in purgatory with crusty bread and salad.

Oh, y'all are making me hungry.

Grilled chicken thighs (preseasoned and refrigerated to allow the seasonings to penetrate), rainbow chard, saute'd with garlic, red pepper flakes and a squeeze of lemon, brown rice pilaf (onion, chicken broth, splash of white wine, cremini mushrooms, chives, lemon thyme).

Now I'm REALLY hungry. ;oD

Unagi-stuffed onigiri! It was very tasty before class tonight :D

Baked pork chops stuffed with cranberries, roasted veggies (onions, red potatoes, carrots, cauliflower) and dressing, with pan gravy

Icky ziti (not like the delicious ziti on SE with the heavy cream) in the dining hall. And yes, the alternate meal was rigatoni with red sauce. And oh yes, lunch was pasta with white sauce, pasta with red sauce or the alternate meal choice-rigatoni with pasta. The side dish was rice. Great meal planning. Tomorrow I will make something so yummy it will be a shock and awe meal--at home!!

Shrimp with lemon, garlic and parsley over angel hair pasta. Some white wine to go with, probably chardonnay.

I picked one of my remaining tomatoes, which I sliced to top a burger. I am eating tomatoes twice a day while they last.

@italiancupcake: how did it turn out ?!?!?!?!??!?! i really hope you like the cod as much as we do...

tonight it was just me & my girls. dh went to a baseball game, but i forgot we weren't eating en famille and went ahead and made a shepard's pie. used up our leftover mashed potatoes from weekend dinner party and didn't have to worry about sides because i have protein, carb, & vegetables all in one dish!

wow, it all sounds great.... everybody! we had a salad of the last of the cucumbers and tomatoes from the garden, some cauliflower with garlic and olive oil and a piece of steak that was grilled.... a few blue italian plums for dessert .... hate to see all these goodies go....

sweet potatoes baked with lemon juice, brown sugar, little bit of butter, cranberries and almonds + celery sticks and cream cheese.

Gosh, everything sounds so good. This is definitely the place to come for inspiration. We had farm fresh, scrambled eggs from our chickens, served on toasted bread with turkey bacon and O'Brien hash browns. It was yummy, we haven't had breakfast for supper in a long time. I even got an exra kiss from my husband for it.

i had a can of salmon packed in water, with salsa poured over the top and a couple of rye crisps. then some raspberries from the greenmarket. now i'm hungry again.

Ooops. . .I did tonight's meal on tomorrow night's thread, so here it goes again.

My dad would wolf this down, probably because it was the only thing my mom cooked that he liked. Pan-fried pork chops, sauteed apples, mashed potatoes and canned cream-corn "gravy." Quick, easy, tasty, but geez, where's the eye-popping color?

Lentils & rice with fried onions, sauteed spinach with cilantro and pine nuts, roasted butternut squash chunks drizzled with honey and dusted with cinnamon. For dessert, baked custard and cookies. I don't know what these cookies are called. You take prunes, cook them and puree, add toasted walnuts and fill cut out pie crust circles, gently squeezing three sides together but not closing completely, then bake 375 till crust is lightly browned. They're good and there is no sugar added. The dried prunes are so sweet you don't need it.

Sweet Basil and Olive Oil Cupcakes

For the cupcakes:

3 eggs
1 C. Sugar
3 tsp. Orange Zest
3 tsp. Lemon Zest
3/4 C. Olive Oil
2 1/2 C. Self Rising Flour
1/3 C. Milk
1/3 C. OJ

Heat oven to 350 degrees
Line 18 standard muffin cups
Whisk eggs and sugar until well combined. Add both zests and then stir in olive oil.
Alternately add flour, milk and oj. Stir mixture gently for 30 seconds with wooden spoon.
Divide mixture evenly among the muffin tins.
Bake 15 minutes or until a toothpick comes out clean.
Transfer to cooling rack.
Frost with Creamy Basil Frosting

Creamy Basil Frosting:

3 C. Powdered Sugar
1/3 C. Butter
1/4 C. Mik
1 tsp. Vanilla
2 tbsp. finely minced basil

Combine butter, milk, vanilla and basil in large mixing bowl. Add half the powdered sugar and beat until smooth. Gradually add in remainder of powdered sugar.

amish friendship soup my sister gave me.

i learned why its called friendship soup... you need to have people to share it with as the ingredients grow to drastic amounts of soup. you can barely notice we had some last night!

Thanks Martini - Basil is my favorite herb, never would have thought to incorporate into a sweet. Yay!
