What's for Dinner? 09/03

Beorn was not happy with the salad last night, as I knew he wouldn't be. So, tonight is fried chicken, oven roasted corn on the cob, and steamed broccoli.

Pam- how long do you roast your corn in the oven - at what temperature? I was thinking of roasting corn when I roast some other veggies - onions, squash, peppers, which I roast about 25 minutes at 400.

Tonight, though, is macaroni and beef, or what we call Goulash in New England (or American Chop Suey, for some reason). Very simple - hamburg, onion, garlic, fresh tomatoes, cooked macaroni, salt and black pepper.

For me and the husband - baked beans with hot dogs. I keep on trying but just can't make myself eat fish.

For the rest of the family, salmon with taters, turnip and cabbage.

@lemonfair ~ the roast corn is done at a slightly lower temperature for longer.
Leave it in the husk, unsilked. Preheat the oven to 350. Set the ears of corn directly on the oven rack in the center of the oven. Roast about 40 to 45 minutes. The husks will begin to brown.

Pull the ears out of the oven, and shuck while holding the ear in an ove-glove or silicone mitt if you have one. The husks and silk comes off much easier than before being roasted.

We like to leave the husk dangling below the ear, and use them as a handle to eat the hot corn. Melt a pat of butter on the hot ear, season to your liking.

One thing to keep in mind, you want to try and get smaller, tender ears if possible. The roasting makes the kernals more tender crisp than boiling. Larger, tougher ears of corn, while still good, may seem a bit too chewy after oven roasting.

We're doing a mish mash of vietnamese fresh rolls tonight.

Shrimp, (chinese)bbq'ed pork and a grilled thai beef ball from a recipe found right here. http://www.seriouseats.com/recipes/2008/08/grilling-thai-beef-rolls-with-sweet-chili-sauce-recipe.html will be the protein fillers go go along with the fresh mint, thai basil and cilantro, rice noodles, bean sprouts cucumber and green onions wrapped in rice paper.

We'll also have some chinese broccoli steamed with hoisin or oyster sauce, and I've already made a peanut sauce and a sweet spicy fish sauce for dipping. Also maybe some rice on teh side? It's a bit all over the place, but my Dad's visiting and wants to learn how to make the rolls so I thought I'd do a number of options so as to be able to make a full meal.

Movie popcorn and a root beer as we are going to the cinema.

have pork w/ salsa verde in the slow cooker... will be making brow rice to go along with it.

BLT's to use up some garden fresh tomatoes! I also just made Cream of Mushroom soup...don't know if it will last till dinner though....

Chicken fajitas with refried black beans. Going out of town over the weekend, so no leftovers allowed!

Last night we split a loaf of homemade garlic bread with some salami on the side.

Tonight maybe we will finish up the Greek style pasta salad from Tuesday night. Bow tie pasta, tomatoes, olives, feta, fresh parsley and some chicken breast.

Might toast up some pita in the oven or on the grill pan to go with it.

We are going to a burger place tonight with friends, the Yellow Griffin. It's pick your patty (beef, turkey, veggie, pork, lamb, chicken breast, salmon hunk) and then pick your topping combination and side. I had a vegan lunch (some of the best food on campus, the once-a-week student-cooked vegan thing) so I will probably go for a meatwad.

Grilled cheese!

Kielbasa slow-cooked in a nice, dark beer, and pierogi and onion sauteed in butter.

Takeout pizza with a salad. I'm feeling lazy because I know tomorrow is going to be busy. I'm co-hosting our neighborhood block party tomorrow and since my husband is out of town I'll be quite busy. Thankfully our neighbors who are hosting the event with us are "can do" people.

very boring tonight-just cereal

@wellred - I was seriously disappointed the one time I went to the Yellow Griffin. It came so highly recommended and was quite a hike for us... Sigh. Maybe we hit them on a bad night? How was your experience?

MMM Dinner, my favorite meal of the day - and today I am "treating" myself... I am having Salmon Belly (Broiled with Olive Oil, Salt & Pepper)... along with Baked Spaghetti Squash and a little sauteed onion & spinach... Broccoli might be thrown in there too but not too sure yet.

Did Famous Dave's. We shared smoked salmon and flatbread platter. I had the smoked salmon caesar salad, husband had his usual Memphis style baby back ribs with beef brisket + corn, corn muffin, fries, and slaw, my friend had the St Louis style ribs, fries.

Forgot to add that I bought an 8" square cassata cake for the three of us to celebrate our birthdays. It's half gone. :P
