What's for Dinner? 09/02

After all of the celebrating the past three days, tonight will be something light. Grilled chicken breast slices on salad greens with grape tomatoes, chevre and craisins added. Mine will be dressed simply with extra virgin olive oil and balsamic vinegar. The guys can choose their dressing for themselves.

i love these dinner threads. alas, as i am limited to campus food im afraid my contributions wont be that tasty.

but for tonight - my new favorite food - a smoked turkey & brie wrap. with dried cranberry mayonnaise. its amazing and the best thing i have ever eaten on campus.

Couscous and chicken. My fiance and I broke it off about 10 days ago, and I'm getting used to cooking for just me again. So far, it's mostly couscous and chicken or sandwiches. I need to branch out (although couscous and chicken is about my favorite meal ever)...

After a long first day of students again, I'm thinking of a bowl of Rice Chex and bed...

Roasted pork loin studded with garlic cloves and basted with Sweet Baby Ray's BBQ sauce & orange juice, sauteed spinach and jasmine rice.

I'm having a burger cook-off with the US burger (mine) vs. the Russian burger (my Russian art teacher). I really like English muffins as the bun as they soak up a lot of the goodness but still maintain shape. I'm making grilled sweet potatoes with a maple glaze for the side dish and she's bringing a fruit salad and her patties. Should be good!

Chicken and biscuits with mashed potatoes and a salad. Husband is leaving tomorrow for Vietnam for a week so I thought I would make one of his favorite comfort foods.

Fish cooked in foil with tomatoes, white beans, herbs and lemon with an arugula salad on the side.

Chili dogs! Homemade chili, Trader Joes nitrate free all beef hot dogs and
sauerkraut on a whole wheat bun (with cheddar and onions on top) YUM

ribs on the charcoal grill and sliced tomatoes from the garden with a bit of balsamic vinegar and a sprinkle of sea salt. And some lemonade.

Chicken lo mein and tomato/cuke/onion salad with key lime vinegrette.

Pasghetti for dinner tonight...unless we go out. We went out for lunch at CPK -- husband had BLT pizza and I had lettuce wraps.

The sauce was made up a few nights ago and consists of broccoli, olives, tomatoes, ground beef, mushrooms, zucchini, yellow squash, and a ton of basil (had to get rid of it before the lot went bad).

Grilled Cheese and Curried Carrot Soup.

Tunafish sandwiches and Chicken Noodle soup...got a cold.

Hot Dogs on potato buns at the baseball game.

going out for Sushi. man, am i excited.

OHHH boy, it was just going to a few drinks and dinner to go night and turned out till closing and nothing to eat lst night. I have my to go to eat so I will be having a Monte Cristo.

Farmer's market day- fresh LI corn, tomatoes & cucumbers with extra virgin olive oil and sea salt, goat milk feta with leftover grilled chicken. We had an amazing lunch at a tiny hummus/felafel place so I brought home hummus, whole wheat pita and Israeli chicken soup.

the dinner tonight recipe for sausage and spinach pasta but with quinoa instead of pasta.

Beef and Wild Rice soup, using leftovers from a pot roast made earlier this week.

DH has a cold, so I made chicken doodle (he's stuffy) soup from scratch.

Goin' out for sushi...It's been too long!

Marcella Hazan's Lasagne with Bolognese Ragu and green salad with oil and balsamic dressing ~ made it yesterday.
