What so serve with Acorn Squash

I'm going to bake 2 acorn squash using the recipe from Simply Recipes, and I'm not sure what to serve with it..protein and one more side? suggestions please!

I think it'd be good with roasted chicken or pulled pork. Or you can make a rice pilaf.

Perhaps it's just my own cravings driving this comment, but after looking at that recipe, my first thought was roasting a rabbit over buttery new potatoes and carrots and celery and onion.

Any kind of roast seems like a good idea, given that the oven will already be on for so long.

I just made an herb rubbed roasted pork tenderloin last night (small - 1 lb). It was really great and maybe it's just fresh in my memory, but I recommend it to go with your acorn squash! The flavor and texture were quite delicate. Depending on how you season your tenderloin, it could really compliment the sweetness of the squash nicely.

For another side, I'd just do a braised endive or a spinach salad.

I would do a lovely roasted chicken -- massage the chick with nothing but garlic & herb butter and leave it to roast until the skin is crispy and golden brown. Then I'd do brussel sprouts with bacon, and roasted new potatoes.

Breaded baked pork chops and baked potatoes. Make the entire meal an oven meal.

Or roast a chicken and roasted potatoes.

Roast pork, spatzle and saute'd apples.
