Dish for a S. American themed potluck

I've got a potluck next Friday that has a South American theme (broad, I know). I'm bringing a bottle of Carmenere, and would like a Chilean dish to accompany it. I also was thinking of bringing a dish with Chimmichurri sauce (Argentinean). Does anyone have some other creative ideas?
