No-knead bread question???
I am making the NYT's no-knead bread. When I place it in the already heated baking pot should I spray it first? With Pam or a bit of butter?

When I made it the first time I didn't spray it and it was a pain to get out of the pan. I would definetely spray the pan, it will make your life much easier!

I don't spray the pot and haven't had sticking issues - since the temperature in the pot is so high both pam and butter will break down and burn.

Don't spray, scatter some cornmeal on the bottom of the pot. That'll help prevent any sticking (which I've never had a problem with).

I agree - A little cornmeal (coarse or fine) or some whole wheat flour will prevent bread from sticking. Same goes for pizza dough...

The Cook's Illustrated version of the recipe has the bread rising on parchment paper in a round skillet and then picking up the parchment paper with the dough and putting the whole thing in the pot. Works great for me.

I saw the C.I. version this weekend on PBS. Does anyone have the recipe? I know it was *slightly* different from the original.

You can go to Cook's Illustrated and register (which is free) and find it. A good site to get acquainted with. The biggest difference was that they needed it just a few times (15 seconds, I think they said) and it rose a lot better. The parchment sling is just the sort of sensible thing they're so good at figuring out.

if your pot is seasoned, then the bread won't stick. Otherwise, cornmeal and wheat bran or even flour will help keep the dough from sticking.

Seasoned pot and corn meal works every time. Don't spray it. Seriously. :)

Ok lovies....it worked just great with the corn meal. It didn't rise very much...ok not at all but it was still very tasty and gorgeous. So pretty I put it on my facebook page to let everyone know that I have mad skills!

I use a cast iron pot and have never needed to grease it.
