Falafel would be my top pic! Hummus, cucumber, and lettuce sandwiches. Grilled cheese sandwiches and tomato soup, French onion soup made with vegetable rather than beef broth, veggie chili and corn bread, vegetable pizza, bean tacos, enchiladas, or burritos (so long as I'm not invited as I don't like Mexican food), veggie burgers or sandwiches. Stuffed tomatoes. All crowd pleasing.

Are you talking school lunches for a crowd, including hot lunches? Or are you talking lunchpail lunches for just your family?

Get Play With Your Food and put a swan apple or mice radishes into her lunch bag now and then. Give her a reason to think that her lunch bag has something that other kids will think is cool.
What is she eating for lunch at home?
PB and jam or brown sugar or nutella. Grinders with all the regular add-ons, just no meat. Avocados and grilled portabellos.

Burritos and enchiladas are my favorite freezer food. Beans and/or veggies and rice, eggs+beans+salsa+cheese for burritos. Black bean enchiladas are nice and filling (and healthy), I like to do a chile verde tomatillo sauce on them. How does your kidlet feet about quinoa? High protein grains make a great base for a lunch. Something like this might be a little too pasta-salad-y, but I think it would fit your bill of healthy veg lunch fare. Also, don't discount a piecemeal meal: whole grain crackers, a nice cheese, nuts and dried fruit, plus some yogurt or something like that for when you don't really want to have to prepare a lot of food.

A cous-cous salad with diced peppers, cucumbers, tomatoes and whatever nice seasoning you have, with a lemon/garlic/mustard dressing.
Have you experimented with any of the 'fake meats'? I'm quite a fan...you can send your child off with a 'fake' ham and cheese sandwich with lots of lovely sliced tomato and salad leaf.
I also agree with the piecemeal approach. Some proper biscuits and cheese, some fruit, and a pot of yogurt. Add some sliced carrots or celery and a small pot of hummus if you like.
I also think cold pizza makes for an excellent lunch.

I get lunch box inspiration from going through pictures on the flickr 'brought my lunch' and 'laptop lunch' groups.

The "Vegan Lunch Box" web site and book (which I've checked out from the library a half dozen times so far) are excellent, and the author includes lots of unusual, tempting international ideas as well. My 13 yr old son is not a picky eater, but he really enjoys the variety.

Baby Bell Cheeses would be fun for the lunchbox. For sandwiches offer sliced or flavored cream cheeses or other flavored &/or soft cheeses & spreads like Boursin, Brie, etc. with nice crackers, pita, bagels or those new flatbread buns. My kids loved alfalfa sprouts as they don't wilt like lettuce. Some other fun cream cheese toppings are raisins, Craisins or dried fruit bits.
Grape or cherry tomatoes, and all other types of veggies and fruits. Do eggs get included in this veg. diet? Egg salad, hard cooked eggs, etc.
Try sugar snap pea pods left whole, alongside baby carrots.

Wheat berries are very yummy and nutritious and make a wonderfully crunchy and hearty salad. Try:
wheat berry waldorf salad
wheat berry salad with raisins, beets and citrus
ellie krieger's wheat berry salad

Here are a few vegetarian alternatives tried and tested on my 7-yr old nieces, and they're not vegetarian, but picky eaters too:
Babagahummus
Veggie cream cheese Sandwiches
Asparagus Sandwiches
Empanada Gallega
Spinach Pinwheels
They're mac & cheese lovers, so they always ask me for Undercover Mac & Cheese and Cauliflower & Cheese Mac
Hummus Sandwich

Hi VegetarianGirl,
I recently started making Bento-style lunches, and I'm not sure if you'd find these links useful, but there are some vegetarian lunches in here, so here you go:
Weekly Bento Round-Up #1 (A bunch of vegetarian lunches in this one.)
Weekly Bento Round-Up #2 (The cold sweet potato noodle salad in this one could be perfect for you.)
Good luck with the lunch-making!
