Introductory Bean Recipe
I just cooked a black-bean based dish for my meat-loving parents and now my Dad is asking me for another bean-based recipe to try out for a spin himself. I'm at a bit of a loss at what to recommend for someone who's never cooked with beans before, but I want it to be a simple and tasty recipe so to make my whole schtick about how it's unnecessary to eat meat three times a day more convincing and do-able for him. Any suggestions?

This is not for a meal, but a really yummy snack or appetizer. It's call cowboy salsa or texas caviar. Basically you just put cans of rinsed black beans, rinsed black-eyed peas, corn, diced bell peppers, diced onions, diced tomatoes into a bowl. Add Italian dressing and a pinch of garlic salt. Let it sit in the fridge overnight to let the flavors soak in. I sometimes add chopped cilantro and leave out tomatoes. Really, just find a combination you like. You can also add navy beans or any other beans. Serve it with tortilla chips or crackers...he won't even notice the beans!

Give your dad your bean recipe and suggest that he add a cup of italian sausage or low fat keilbasa. (A cup is not a lot , but may satisfy him) I agree with you that you don't always need meat especially this time of year, but old habits are hard to break and a little meat might satisfy him. And if he eats this more often even with the meat it is so much better than lots of other meals he might eat.

There's always minestrone soup. Saute some chopped onions, carrots, and celery. Homemade or a good canned chicken stock, OR water and Better Than Bouillon or More Than Gourmet soup base. Drained and rinsed cans of cannellini beans. A half of a box of frozen spinach. Maybe a can of diced tomatoes. Add pre-boiled cheese tortellini or pre-boiled small pasta shapes at the end. I find cooking pasta in the soup makes the soup taste pasty. Half moon shaped zucchini at the end also because they cook even with the heat turned off and the lid on.
Serve with grated Parmesan to sprinkle on top and garlic bread.

How about a three bean chili using kidney, navy and pinto beans? Most men like to either make or eat chili, and if it hearty enough, your dad probably won't miss the meat. I used to make a white bean turkey chili for a church men's group that I used to cook for, and they seemed to really enjoy it, even though I used ground white turkey meat instead of ground beef. Serve with thick wedges of cornbread, and he won't leave the table hungry.

Can always try him on Hummus - easy to make at home (lots of recipes on web) and extremely healthy.

Pureed bean soups are great. Black bean, white bean ... you name it. Go to town with the bean thing. Stock up on the air freshener.

I would suggest hummus too... but instead of eating it the traditional way, how about including itin a sandwich with grain mustard , or in a pastelon...
I am also new to the bean world myself and I love making this cocido with chickpeas. Eat it over rice and it's delicious.
