homemade pasta

Hi everyone.My pasta machine died.ITwas a good one.it needed the dough and then extruded it.I BOUGHT IT IN 1979 SO i got a lot of use out of it.Does any one have the basic pasta recipe to need and roll out by hand.thanks,PAM,also does anyone know of a good machine on the market.tThe ones I HAVE BEEN LOOKING AT DON'T MIX THE DOUGH.

3/4 cup ap flour
1 large egg
pinch of salt
1 tsp water

If you have a kitchen aid, get the pasta roller attachments. You can mix and knead the dough using the mixer, roll out the sheets with the sheet roller, and cut fettucini or linguini all in one shot.

super easy by hand method:

1 cup flour
2 eggs
pinch of salt

create a well in the center of your flour and crack eggs into it. mix the flour and eggs by hand and start kneading when it comes together. add more flour if necessary, continuing to knead until the dough is smooth and not scraggly. once smooth, let it rest for a bit on the counter - at least 10 minutes.

roll out your dough and cut into strips of desired thickness. boil for 2 minutes and you're good to go!

makes 2 servings.

I'm a big fan of the KitchenAid Pasta attachments. I use the roller and cutters often. There's a new pasta attachment at Williams-Sonoma. I haven't gotten it yet, but I've got my eye one it.

What's this new attachment you speak of? Is it KA compatible or a separate product?

Wow, 30 years for a pasta machine, impressive!

I broke my extruder machine in less than a year. Now I have an ATLAS brand machine. It does not kneed the dough but I highly reccommend it. Hand kneeding of pasta is a pleasure in my opinion. I think the carbs don't count if you make it by hand.

They are basically a hand crank stainless steel job that will last FOREVER. There are motor attachements that you can also buy if the hand cranking is a problem. The machine by itself is right around $50-$60.

2 1/2 cups of AP flour
2 large eggs
a pinch of salt
a dash of olive oil

I put the flour in a boiling pot, then make a hole in the middle for my eggs, oil and salt. Then slowly mix the flour in with the eggs. If your dough is to dry add a bit of water, If its to sticky pat the outside with more flour. After that I just take a rolling pin to it and cut what ever shapes I like out.
