Foodie spots in Las Vegas?

Does anyone know any foodie spots in Las Vegas? Preferably downtown or in a neighboring town like Henderson? I'm looking for something great, but off the strip... Thank you!!

Lotus of Siam has great thai food. Just off the Strip on E. Sahara (about 1/3 mi.)

Do you like dim sum? When I was in Vegas this past March for my 30th bday, my twin and a few of our friends went to this dim sum restaurant off the strip. We took a cab there and walked back. The food was great and super affordable.

Rosemary's on W. Sahara is very, very fine and gets consistently high marks in reviews. We've had some terrific lamb and sweetbread dishes there recently...menu can be found here http://www.rosemarysrestaurant.com/index.htm

I enjoyed myself at Mario Batali's San Marco in the Venetian. http://www.enotecasanmarco.com/

I can't remember the name of the drink I got but I asked the waiter for a bellini and he suggested this grappa, strawberry, and rhubarb puree drink instead and it was beyond tasty. I also still drool thinking about the ricotta gelati I had.

I know you said off the strip but if you do get dragged there, you could enjoy eating at San Marco.

Todd's Unique Dining - Henderson. in a strip mall, but fantastic. Use lots of local ingredients, great service. Fun atmosphere.

Just a note about Mario Batali's San Marco in the Venetian -- be prepared for a marathon meal. I've been there three times and never did we leave before midnight. And not because we had 10 courses either, it's a slow enjoy-your-food/wine sort of place - like in Italy. You are NOT going to get in/out in an hour or two. And be prepared to wait, even with resos.
