Dish for a S. American themed potluck
I've got a potluck next Friday that has a South American theme (broad, I know). I'm bringing a bottle of Carmenere, and would like a Chilean dish to accompany it. I also was thinking of bringing a dish with Chimmichurri sauce (Argentinean). Does anyone have some other creative ideas?

i believe there are several kinds of empanadas ... each country with their own twist .... sometimes if i'm in a hurry, i'll use puff pastry for my dough (with a little cornmeal rolled in for texture...) the fillings vary, and then i just bake them in the oven instead of frying them... pretty easy (though maybe not so authentic)....

Pernil (pork shoulder) marinated with lots of garlic, onions, adobo, sour orange marinade (Goya) --when it's done--cool it down, shred it ---you can use in tacos, or mix in the marinated shredded pork into the ever popular rice and beans..or in empanadas...
@pooch-empanadas are a great choice too....

Fresh corn tamales (humitas), arroz con pollo, papa rellenas, Chilean style beef stew.

@italiancupcake - pernil!!!! ohhh that is good. sour orange marinade? even better.... love a good pernil.... i usually throw it in the oven at 250-275 covered with foil and let it go all day long.... then a uncover, let it brown and the meat literally falls apart under the skin.

I use the empanada wrappers from Whole Foods, and serve it with sour cream mixed with lime juice and lime zest. Have brought to several potlucks and they are always a hit.

I went to a dinner party once where the anthropologist host had just come back from South America, but I don't remember which country. At the time it struck me as rather daring to serve this as the main dish, but it's actually my favorite food now, though I take shortcuts with it and cook it as one dish and use canned beans. It was black beans on rice. The black beans (cooked from dried, not canned) were seasoned with onion and orange (maybe garlic, but the hostess didn't say so when she gave me the recipe). Served on a bed of rice with a hot oil mixed with lemon juice, slices of orange, and sour cream.

I would say a nice cajun style rice dish would do the trick and be sure to include some shredded carrots and corn and black beans and make it spicy with chipolte peppers. It very colorful and festive
