Appetizers?
I've been asked to bring an appetizer or two to a party in a few weeks -- I need something that will travel well and doesn't need to be reheated (party is about 1.5 hour drive away) -- and the apps also need to be "substantial" -- hostess provides a lot of alcohol and does a wonderful job with desserts, but not so much with the savories, so I want to bring something more balanced ... Last time, I brought a tortilla espanola, which was a hit, but I wanted to branch out a little. Any ideas/recipes are appreciated! Thanks!

Asian summer rolls. You can do different types ie shrimp, chicken, pork, tofu (satisfy vergetarians). Wrap protein, vermicelli noodles, cilantro carrots and lettuce in rice paper. You can make a peanut satay or sesame soy or chili dipping sauce to accompany. You can make ahead and keep refrigerated until you leave. They should be fine in transit.

Cheese platter with fruit and crackers

Asparagus Fingers (These are awesomely delicious)
Asparagus, trimmed, steamed until bright green, yet still tender-crisp. Cooled.
herbed goat cheese, boursin or herbed cream cheese
prosciutto or very thinly sliced deli ham
fresh basil, very thinly sliced (chiffonade)
Spread slices of ham with a thin layer of herbed cheese spread. Lay a few slivers of fresh basil chiffonade over the cheese. Place an asparagus stalk on one end of the herbed cheese ham and roll up. Chill and serve as full stalks or cut to bite size.

Roast Beef & Blue Cheese Spears
TO MAKE: Combine 2 tablespoons reduced-fat sour cream with 2 tablespoons crumbled blue cheese. Top spears from 2 heads of Treviso (a slender variety of radicchio) or Belgian endive with ribbons of thinly sliced roast beef and a dollop of the blue cheese cream. Makes 16 servings.

Steak-&-Boursin-Wrapped Bells—Use different colored bell peppers to make these pretty.
TO MAKE: Roll thinly sliced grilled steak (or deli beef strip 1-1/2 inch wide, 1/8 inch thick), such as filet mignon, around a small dollop of light Boursin cheese and thin slices of bell pepper.

Bacon wrapped breadsticks--I've done two variations. Spread a bit of dijon mustard on each slice of bacon and sprinkle with either grated parm or brown sugar and then tightly wrap bacon around breadstick and bake on a parchment lined sheet tray until bacon is crisp.
Brie wrapped in phyllo or puff pastry and baked. You can split the brie in half and fill with mushrooms or dried fruit first if you please. Serve with baguette slices and fresh fruit (it's apple season!). The wrapped Brie should hold the heat pretty well and still is wonderful at room temp.

I like small fingers of cheese (gruyere or gouda) with a small slice of ripe tomato wrapped up in parma ham and closed with a toothpick. You can add sauce if you'd like.
I also like small cucumber and tomato sandwiches and fresh buttered bread with salt and pepper. Cut a full slice into quarters. You can get creative...add some smoked ham or salami if you want.
Crab and spinach dip. Crabmeat, sauteed spinach and cream cheese, lots of pepper, baked until the top bubbles. Serve with sliced baguette. You can add pureed artichoke hearts as well if you like.
I also used to do mini-tortillas. Thin flank steak, seared until just barely cooked, rolled up with salsa, cheese and guacamole in a flour tortilla. Put toothpicks through at intervals, then cut up into small portions. Maybe some sour cream on the side.
I also think there is nothing wrong with an array of interesting cheeses and some proper biscuits. Maybe some fresh grapes on the side.

Spanikopita is my go-to appetizer, and if would fit your needs. Make it the same day so the phyllo will be crisp, but It will travel well and can certainly stay out a few hours. In a 9x13 pan I cut either 15 for meal portions, or 24 for appetizers.

Leek Pies
Ingredients
* 3 C. (750 ml) chopped leeks, white parts only, thoroughly rinsed
* 1 Tbs. (15 ml) vegetable oil
* 2 tsp. (10 ml) salt
* 1/4 tsp. (1 ml) cayenne pepper
* pastry dough
Directions
Combine the leeks, oil, salt, and cayenne in a mixing bowl and stir to combine. Roll the pastry dough out and cut 4-inch (10 cm) rounds.
Place about 2 tsp. (10 ml) of the leek mixture in the center of each round, moisten the edges of the dough with water, fold over the filling, and press the edges together forming a semi-circle. Using the edge of a small spoon or sewing thimble (traditional), press crescent shapes into the edge of the pastry. Deep fry in hot oil until golden brown on both sides, or bake in a preheated 350 degree oven until the pastry is golden brown, 20 to 30 minutes.
