A pound of ground beef
I'm a college student living in the dorms, and I have a pound of ground beef in my fridge. I have little to nothing else, but the grocery store is a block away so that's not too much of a problem.
Any ideas for a quick meal I could make today and then eat as leftovers throughout the week? Or something simple to make that I could modify throughout the week?

There are entire cookbooks built around a pound of ground beef, but if you can buy or borrow curry powder, and get a large onion and either fresh or powdered ginger, I would saute the beef and onion with the Indian spices and stuff it in whole wheat pita. Leftovers will taste as good as the first day (or better.) If, while you're buying the onion, you are inspired to buy two potatoes and a package of frozen peas, it will be even better--and stretch further. Dice the potatoes and cook with the beef for at least 20 minutes--add the peas the last ten minutes of cooking time. How much curry powder you use will be to your taste, but I would use at least a tablespoon. Add a chopped jalapeno if you like heat!

I've just done this myself this week. Cook the ground beef loose with a minced onion or two (unless you want to use a quarter to a third of it for a burger today)
Cook pasta, (I like penne for this, but it doesn't matter), drain, put back on stove add some of your beef and onions, add a little cheese (up to 2-3 oz for one meal,), a spoon of cream (preferably)or milk if you have it, maybe a little butter and a spoon of pasta water if you don't, salt and black pepper. Better than hamburger helper, but has a similar cheesy beefy flavor.
Another time add some sour cream and a touch of worcestershire sauce to this mix and it's faux stroganoff.
Or add a cut up tomato or two (no need to peel) at the end and just let them warm in the pasta without cooking.
Or starting with the beef and onion add a diced potato, a little water, cover and stir fairly often, and you'll have a hamburg hash. Salt and black pepper and a dash of worcestershire sauce. Have with ketchup
At a minimum you could buy just pasta, cheese and a potato and have all these. worcestershire (soy sauce in a pinch) would increase your options.
For cheese, btw, I'd get a mild cheddar and maybe a monty jack or a muenster, the cheddar will give some sharpness and the softer cheese will help it all melt into a nice sauce.

Cook up the meat with onion and garlic. Portion it out to make taco's & - or burritos, and then pasta sauce.

Do as lemonfair suggests and make sure you door is locked when you start cooking all of those goodies or else I suspect you'll have a room full of new friends.

There are some pretty meaty tomatoes out there these days. If your store has them buy four, cut the tops and take the innards out and mix them with your ground beef, salt/pepper, garlic powder and a small can of tomato sauce. Bake at 350 until the meat is cooked through-about 30 minutes. You could add rice or use red or green peppers as your stuffing vegetable. I make the tomatoes when the stuffing tomatoes come in season and make extra for lunch.

A big pot of chili?
Next day- make macaroni or mac & cheese. Spoon into a bowl and top with chili for chili-mac.
Or make taco meat. Tacos one day. Mix with refried beans for burritos the next. Quesidillas day after that. Fritatta or hash with what's left.

Hamburger vegetable soup. (onion, carrot, celery, canned tomatoes, green beans, corn, pease, etc.)
Divide in half. Add barley and mushrooms to one batch.
Add cannelini or red beans, a diced potato, some small pasta and Italian seasonings to the other as minestrone.

You could do an easy shepard's pie; buy canned vegetables and box mix mashed potatoes. So basically you brown the beef, mix in the veggies, and put that into a casserole dish. Make the mashed potatoes and layer it on top of the meat and veg. Pop that in the over for like 35-40 min and you're done. I know it's not the quickest recipe, but it's super simple and really tasty. There are tons of recipes for shepard's pie online; some add in layers of cheese, some have mushrooms, it's all about what you like. As a college kid myself, I like it because it's easy to make, lasts me for about a week, and tastes really "homey".

Throw in pot. Cover. Uncover. Eat cheap goodness for days.

Spaghetti/lasagna, pastitsio, hamburger curry, funky stroganoff, potatoes and beef, burritos/enchiladas (lazy way is make it like lasagna), soup, bierox/piroshki (easy to eat and run).

Tacos are good if you'd like leftovers because all of the components can be covered and refrigerated and most can be either purchased at the store or easily made if you have space and kitchen tools in your dorm.
Brown the meat in a pan, drain the fat, add spices (you can probably find a bag of taco seasoning a the store). Dice an onion, dice a tomato, buy shredded cheese, salsa, sour cream, guacamole, etc...
Or if you have a crockpot you can always make crockpot chili.

A favorite in this house is ground beef, eggs, and onions on a hoagie roll.
Sautee the onion, add the ground beef, season, add the eggs proportionately right before you eat. Scramble. One egg per person works well.
Hubby takes it a step further and tops with cheese and throws it under the broiler for a few minutes.
Utter goodness.

Cook the ground beef with onions, worcestershire sauce, salt and pepper.
Samosas: Raw Store bought Pie Dough cut into trianles or Egg Roll wrappers cut in half on the diagnal, red curry powder,eggs, water, diced green bell pepper. Cook the peppers with the curry in a pan till soft, add the meat mixture to the peppers to re heat and portion into the pie doughs or wrappers and seal with a egg wash..bake till crunchy and light brown
Pasta Sauce: "Dr. up" a store bought pasta sauce with your meat mixture and heat over medium heat till nice and hot. and serve over your favorite cooked pasta.
Tacos: add chilli powder and cooked green peppers for a easy taco meat. serve with whatever fixins you like best
