What's for Dinner? 08/31

Actual birthday celebration tonight.

My now 16-year old wants nothing more than the never ending pasta bowl at Olive Garden. I can do that. :)

Grilled chicken breast. Sauteed yellow/green zucchini and eggplant with chevre.

Seared Tuna Steak, cold soba noodle salad

Grilled sandwiches. Husband=Reuben on marble rye, 15 year old son=2 or three colby jacks and hotsauce on Italian, 11 year old son (who's currently driving me nuts with his faux opera singing, think Adam Sandler on SNL)=grilled crunchy peanutbutter on Italian and for me grilled turkey and swiss with onion and T.I. on marble rye.

@dhorst: haha i love it! I'm doing a grilled cheese-esque sandwich for dinner as well!

It's barely 3 p.m. here in Los Angeles, but I've just had my major meal of the day. I may have a yogurt or something later, but I just had a Caesar salad with grilled chicken. It was simple and tasty and it's too hot to turn on the oven anyhow.

@Dhorst: How do teenage boys eat so much?! THREE SANDWICHES? I have two older brothers, but don't really recall their eating habits. I'm sure they ate my parents out of house and home, I was just too young to recall.

Pasta carbonara, using aged goat's cheese and home cured pancetta style pork shoulder. Might toss in some zucchini, as per the courgette carbonara recipe posted on SE a little while back. Probably also a salad or some sort of vegetable matter.

marinated chicken done in my rotisserie, steamed broccoli and home made potato salad....

@dhorst--I was cracking up just thinking about your son doing faux opera-too funny-my nephew did that too when he was about 10 or 11-it's especially great when the voice begins to mature & crack-ha ha
@Gator Pam-I like this thread-please keep it going..gives me great ideas & I love reading what others are having for dinner--everyone seems to have great ideas ....:o)

Chicken and eggplant parm, homemade spaghetti sauce, whole-wheat pasta. Had to cook it in lard, completely out of oil, it was delicious! The whole house smelled like a hogroast, though. Sourdough bread pudding with whiskey sauce for dessert.

@emilytaylor~nothing like grilled sandwiches for a quick meal!

@pumpkinbear~I just don't know where it all goes! He is running cross country and since they're currently doing double sessions for practice, he's truly a bottomless pit. He's running about 15 miles a day. This morning after practice he requested the Michael Phelps special.

@italiancupcake~ah, so you know what I'm talking about! He takes any song--rap, alternative, heavy metal and turns it into opera. At the current moment he's gone old school with Bohemian Rhapsody punctuated here and there with some pretzel crunching.

Roasted chicken and sauteed kale. Kale is my hubby's new favorite veg!

Country fried cube steak with milk gravy, homemade mashed potatoes and haven't figured out the veggie yet...maybe some squash and onions YUM!

@italiancupcake ~ thanks. This type of thread on various forums has always been a favorite of mine as well. Always a source of ideas and inspiration to prevent the food blahs and ruts. :)

@ Gator Pam~he loves grilled crunchy peanutbutter. Something about the contrast with the melty ooziness contrasting with crunchy peanuts and the grilled bread has him in Homer Simpson drool.

Cauliflower and chickpea curry with basmati, cucumber raita, and jeera papads.

A simple fish soup w/ sole, celery, carrots and a little potato. warm and cozy on a cool day.

Grilled steaks, pierogies with fried onions & butter (then slathered with sour cream), and dilled cucumber salad (the kind with vinegar and sugar).

The 13-yr old had dessert: double-stuff Oreos with cold milk.

Cracked pepper turkey breast and Jarlsberg on wheat...yummy

Ooo...
...now I'm craving pierogies and Kluski z Kapusta po Polski (noodles and cabbage).

Pasta with either pesto or bolognese. I'll know when I get home :)

Grilled squash from my mother-in-law's garden, lentils and brown rice with hot sauce...Really good and healthy. I'm making up for it later in the week by doing some experimentation with store-bought puff pastry...I've lined up a few recipes, some savory and some sweet.

Braised beef short ribs with shiraz and mashed potatoes with creme fraiche?

Grilled salmon with mizo glaze, watercress sauteed in oyster sauce & garlic and watermelon granita for dessert :)

a bowl of tomatoes from the garden with sauted onion and hamburger. a touch of mayo, salt and pepper. unexpectedly good. I was just being lazy.

This summer I sent huge amounts of salmon south with every single family member that came to the Kenai peninsula to visit. Well some of that fish was rewarded with a care package from my cousin's wife's cousin ( that was even tough for me to follow ). He sent up various packages of game. It has all been excellent.

I wanted to fire up the charcoal grill for the first time this summer. I have been lazy and using the propane ( yes I have two ). So I dig through the freezer and find a pack of butcher paper wrapped game labeled with nothing but a big smiley face. I opened and am really guessing to the animal but it is sure enough backstrap medallions, most likely from an elk. Will be barely grilling those after marinating in olive oil, garlic, s&p, and balsamic. Serving with grill baked sweet potatoes and some heirloom tomato slices seasoned with just salt and pepper. If I blog it later I will post a link so you can all drool over the photos.

I cooked local pork sausages in a pan (brown- >steam in beer-> re-brown method) and cabbage & carrots with cider vinegar. homemade bread from yesterday.
BF went back to work after realizing he forgot to do something, so I'm waiting for him snacking on the cabbage. about 1/3 gone.

green Thai curried eggplant with coconut milk over rice, maybe with a little fresh basil from the backyard in chiffonade for garnish.

@climb: sounds lovely. cant beat gamey backstrap! too wintry for now, i think. although we've had some cool spells that have spurred some comfort food cravings.

We ate marinated grilled pork summer rolls and pho.

Orrechiette with broccoli rabe and sausage, grilled bread, roasted beets with olive oil and balsamic vinegar and sauteed beet greens with garlic and piri piri peppers.

@dhorst - your household sounds like such a happy household!

we had grilled london broil and a tomato & cucumber salad from the garden....

Mystery Meat for Dinner

Fish and chips, even though it's not Friday. My first granddaughter's 17th birthday dinner selection, whoohoo!

Haddock pieces in a batter of Bisquick and beer; chips were Schwan's Quik-Bake french fries that were deep-fried instead of baked; coleslaw--cabbage, carrots, Best Foods mayo, sugar, cider vinegar, celery seed; lemon meringue pie, the Better Homes and Gardens recipe that I messed around with; and Dorie Greenspan's buttermilk-raspberry layer cake. No leftovers, so tomorrow, when I will be alone and am off of work, I will not eat anything except garden cucumbers, carrots and tomatoes.

Sea Urchin Roe (Uni) and Steamy Glutenous Rice. That's just perfect!

I made elbow macaroni with a sauce of sauteed diced carrots, garlic, tomato paste, white wine, fresh corn kernels, toasted pine nuts and diced smoked mozzarella. Also a side salad of arugula with vinaigrette. It was awesome, if I do say so myself!
