What's for Dinner? 08/27

Tonight's easy here in Gator Town:
The planned overs from yesterday's pan of chicken cheese lasagna. There is no way the three of us could finish that pan in one meal.

Tonight it will be served with tossed salad.

I'm trying to use up stuff in my fridge, so just a turkey sandwich on toasted whole grain bread with cheese and arugula, plus a side salad and glass of wine. Fruit for dessert. Boring, but necessary to eliminate food waste.

I made no roll enchiladas yesterday...kind of like a Mexican lasagna but with corn tortillas. I cut it up in squares and put them in the freezer so I have healthy homemade stuff every night...I do it a lot. I made eggplant Napoleons yesterday and froze those too...it's really handy.

I braised up about 2 pounds of chicken thighs on Monday and we've been using them in different applications over the week. Yesterday I added them to linguine with a spicy peanut sauce. The leftovers were lunch today. Tonight I'm going to add them to stir-fried broccoli and garlic and serve over rice.

@aurelie - if you have cranberry sauce it would be DREAMY on your sandwich and minimize the "boring" element you're not too happy'bout :)

I'll probably make some garlic couscous (again) and sautee some spinach, cherry tomatoes, garlic, onion and tofu. also quite boring.

Taco rice and shrimp summer rolls.

i have cod and halibut in the freezer with broccoli that i'll probably steam with some garlic and stock. need to find a recipe for the fish.

probably a clif bar around 6 (water polo match at 7) and when I get home I will raid the fridge of anything and everything... I am having trouble filling my stomach because of the amount of exercise I've been doing

Pork tenderloin with a mustard cream sauce, mashed red potatoes and roasted broccoli. I can't wait!

It's been one of those days for me at work where I already know that I'm not going to want to cook when I get home so I'm probably going to pick up some sushi. It's been awhile since I've had any and I got a craving for it today!

Swiss steak w/onions, mashed red potatoes, sliced garden tomatoes with blue cheese dressing, and homemade mint iced tea. Sweet corn if the hub remembers to bring some home.

Birthday dinner with the family. Going out to try a newish "authentic" pizzeria in Little Italy. Fingers crossed. Hope it is delicious.

It is really hot here today so I am going to go out and i have no idea till I get to the place what I will get because they always have a surprise specials board that are so good. I there is nothing that tickles my fancy then I will get the taco salad.

Arroz con pollo here, nice warm and comforting on a cool day.

Bok choy & fried tofu satay served over rice. Coincidentally, I just mentioned this dish in the thread about best unexpected dishes of the summer.

This thread would be 1000x better if we could post photos.

Tonight it was elk sliders. Elk burger with shallots, worcestershire, kosher salt, and pepper drizzled with olive oil and grilled to barely rare. This was some amazing ground elk with zero fat added so the olive oil was neccessary to stop it from sticking.

I toasted potato dinner rolls, topped with pepper jack, and sauteed some mushrooms to go along with the burgers. Delicious.

I made brown sugar-mustard pork chops, rice pilaf and toasted brown bread slices (kind of like buttered crostini); with today's garden harvest, I showed my daughter-in-law how to make fried corn, and our salad was blanched green beans, broccoli and white carrots with yellow, red and orange cherry tomatoes in an Italian vinaigrette. Dessert was cheesecake, and my daughter-in-law suggested that I use Twinkies for the crust. The box of Twinkies was a gag birthday gift from one son to another, who'd constantly remind me what a deprived childhood he had because I would never buy them. Anyway, don't try this at your house. It sounded like it would make a great combination, but it wasn't.
