The Mario Batali Leo Maya recipe is a good one

I haven't tried this yet, but I was thinking about tossing a few in a green curry with some scallops one of these days

I made this Tyler Florence recipe last winter and it was AWESOME:

It calls for 15 tomatillos. I'm actually making this again over the weekend for a fundraiser. The only change I would reccomend is adding the lime juice after you take the meat/vegetable mixture out of the oven, not before. I've found that when citrus (even if it's just the juice) cooks too long, it gets kind of bitter. Good luck!

Tyler Florence has a great recipe for homemade tomatillo sauce to be used as a chip dip or in his green chile chicken enchiladas
