The time is upon us.

At last! It is Hatch Chile season! I haven't lived in New Mexico for a decade, but my mouth still waters at the mention of roasted green hatch chiles (yes, I'm a green, not red) Is anyone else as excited as I am? I have convinced a buddy travelling through the area to buy me 5 whole bags of roasted chiles so I can meter them out through the year :D Now I just need to think of some recipes...

We get them in some of the Mexican markets here in Tucson - I love them. Many of the markets roast them daily and sell them. I bought some for my taco-fest yesterday evening.

Tell me about these chilies. What is their flavor? I live in a heavily settled Mexican area with lots of Mexican groceries and I am not familiar with these types of chilies and I love chilies.

Mmmm that means they'll be roasting them in carts outside the grocery store her ein Flagstaff. I'm slowly winning the battle against my natural, irrational aversion to peppers (probably won't ever like them raw, but roasted I can do). What's your favorite way to use them?

We have an International Farmer's Market (inside - all year) and I'll bet they get them. I'll BOLO. I remember when I l ived in SW CO, you could smell those chiles roasting everywhere. Even Wal-Mart used to let guys set up those big barrel roasters in the parking lots.

The best green chile I ever had was in a restaurant in Cortez called Pippo's. Just the right blend of green chiles and pork simmered forever. Unlike you, I also like red chile...LOL.

One of the few happy memories I have of living in Alamosa, CO was on weekends when the chili guys would set up their roasters. The entire town smelled like roasting chilies.

I am not sure what hatch chilies are but i am excited about some sort of peppers growing in Yakima Wa that I just had a light bulb go off to go the hell out there and get some, thanks.

I just bought some specifically for Chiles Rellenos for dinner tonight.
They smell so yummy.
I already made the beans, and the rice is on the stove.
We defrosted our freezer last weekend in preparation for a Labor Day weekend chile roasting fest!! Can't wait...

It is kind of like comparing a normal onion vs. a vidalia onion. I believe the Hatch chiles are closely related to anaheims, but because of where they are grown they have some fantastic subtleties and depth of flavor.

I like red chiles too, don't get me wrong. But greens will always be my first love. Although I would much rather have a red chile dish as opposed to a canned green chile dish. The freshness is key!

Whenever I go to Santa Fe around this time and roll up to a Whole Foods, they are always roasting those chilies in their rolling roasting ovens - they smell awesome!
