Suck the head!
I am seriously craving some crawfish. I wish they were in season. I love those little things. Every year we have a 3-4 crawfish boils between Feb and April and every year about this time as the temp starts to drop I start craving them again.
Boil:
Salt
Crab boil concentrate
Zat Packs
Garlic
Lemons
Zat Pro - powder mix
Butter
Onions
Sausage
Tabasco
Corn
Potatoes
Crawfish
Pour them all over the table and then go to town... rip the tail and suck the head. Yummy.

I crave a handful of things Icant have currently--because the fall semester started and now I am perpetually broke! Ha!

I picked up 6 green tomatoes this week. I love those puppies, dipped in egg, and tabassco, then in a mixture of cornmeal, flour, and cajun spice mix. I am going to make my last two tonight. I crave them when winter hits, but nothing I can do about that.

what do i crave that i can't have? a lot of the baked goods that i used to love when i lived in the bay area. but at my age, i can't have them anyway, so it's just as well that they're all the way across the country.

I thought I would really like crayfish with my love for most other seafood, but the meat/shell ratio is just too low for me to choose crayfish over other shellfish.

Love 'em! I live in north Louisiana. Boiled are great, but I also love to buy frozen tails in cool weather and make etoufee. Yum!

I prefer smothered crawdads. But I used to go to this bar in Houston to watch football on saturdays and they had a guy from Morgan City doing boils complete with zydeco or cajun music, great finger food but it takes so damned much to fill you up! Anyways they did the crawdads in batches and the longer you waited, the more concentrated the heat and the flavor.... I do miss those crawfish boils.
"Smothered Crawfish" Etouffee
Ingredients:
2 tsp. salt
1/2 tsp. cayenne pepper
1/4 tsp. white pepper, ground
1/2 tsp. black pepper, ground
3 each sprigs fresh thyme
1/4 c. salad oil
1/4 c. clarified butter
1/4 c. all-purpose flour
1/2 c. Spanish onions, chopped
1/2 c. celery, chopped
1/2 c. green pepper, chopped
1/2 c. button mushrooms, chopped
1 1/2 c. water or seafood stock
1 c. white wine
1/2 c. diced tomatoes, fresh
1 lb. crawfish tails, peeled
1/2 c. green onions, sliced

Procedure:
Combine seasonings in a small bowl and reserve.
In a heavy-bottomed saucepot over high heat, add the oil, butter and flour, stirring constantly, until the flour is lightly browned.
Add the vegetables and the spice blend and cook over medium heat until the vegetables are soft.
Add the water, wine, tomatoes, crawfish and green onions. Stir until smooth, cover the pan and cook for about 10 minutes, stirring once to avoid sticking in the bottom of the pan.
Serve with plain-boiled rice.

If I'm craving crawfish and they're not in season, I subtitute shrimp.

Crawfish is extremely rare and hard to find here in SW Florida. I assume your recipe would work with shrimp. Have you ever done it with shrimp?

We have quite a lot of freshwater crawfish up here in central Canada. I'm not a big fan tho (ashamed)
