Storing sliced, salted, raw eggplant?
Hi there,
My Spud delivery came today with a big, beautiful eggplant. I sliced it and salted it without talking to my partner, who then didn't come home from work until quite a bit later than I expected...
Anyway, I have this big beautiful eggplant, sliced and salted. And it's now 9pm and I'm not going to cook it tonight. Will it work to rinse it and dry it and put it in a Gladlock container to cook tomorrow, or will it get all mushy and weird?
